Surprisingly Good Refried Bean Soup Recipe - Food.com image

When I first made this I didn't think my kids would eat it. They LOVED it and I ended up having to make another batch. Try it with Tostitos Hint of Lime tortilla chips. My kids like to scoop the soup up with the chips! You can also make this very low fat, if you so choose.

1 small onion, diced
2 garlic cloves, minced
1 tablespoon olive oil
1 (31 ounce) can refried beans
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (10 ounce) can Rotel Tomatoes, undrained
1 (14 1/2 ounce) can chicken broth
crushed tortilla chips
sour cream
shredded cheese

Steps:

  • Cook onions and garlic in oil until transparent.
  • Add all of the rest of the ingredients.
  • Stir the lumps out of the refried beans and heat through.
  • Garnish individual servings with crushed tortilla chips.
  • I like Tostitos with Hint of Lime--mmmm.
  • Sour cream.
  • Shredded cheese-- any kind.

"For Bryan. This is really two recipes, as you can make refried beans out of your leftover pintos. Serve with cornbread, fried potatoes, or rice and top with salsa and cheese for a meatless Tex-Mex dish."

1 pound Pinto beans sorted and rinsed
water to cover beans about 3 inches above the level of the beans
1 1/2 teaspoon Salt
1 teaspoon Chili powder
1 1/2 teaspoon Ground cumin
1/2 teaspoon Black pepper
1/2 teaspoon Garlic powder
1 onion Chopped, optional

Steps:

  • "Place the rinsed and sorted beans in a lidded stockpot and cover with water about 3 inches above the level of the beans. Add the salt and cook on low covered almost all day (at least 6 hours), stirring and checking water levels occasionally. If they get too dry, boil water to add - NEVER ADD COLD WATER - it will make the beans hard. When the beans start getting a nice, slightly thickened broth, add the remaining seasonings and onion, if desired. Cook an additional half an hour or until the onion is soft.
