Sha Cha beef–stir-fried beef slices with sha cha sauce

150 g beef steak (thinly sliced)
1 small bunch of Yu Choy or Chinese broccoli
1/2 tsp. salt
1 tbsp. oyster sauce
½ tbsp. light soy sauce
¼ tsp. ground pepper
¼ tsp. sugar
½ tbsp. Chinese cooking wine ( ,Shaoxing wine)
2 tbsp. water or stock
3 tsp. corn starch
1 tsp. sesame oil
vegetable cooking oil ( ,as needed)
2 garlic cloves
2 tbsp. sha cha sauce

Steps:

  • Cut the beef into slices. Marinate with all the marinating seasonings for 15 minutes.
  • Blanch the vegetables | bring a large pot of water to a boiling and then add a small pinch of salt and 1 teaspoon of oil. Cook for 10-15 seconds until the vegetables are almost cooked. Do not kill the vegetable.
  • Add cooking oil in a large pan until the oil can evenly cover the bottom of the pan. spread the beef slices in. Let them stay for around 3-5 seconds and gently stir them several times until the color changes. Transfer the beef out immediately once the surface colors changes and leave around 1 tablespoon of the oil in. Save the extra oil for vegetable stir frying.
  • Fry garlic and sha cha sauce for around 30 seconds until aromatic. Add beef and mix well.
  • Transfer the beef slices to the serving plate with blanched vegetables.

Razor Clam in Sha Cha Sauce is one of my favorite dishes. Sha Cha is a type of sauce which is actually from my hometown. I was so glad to find it in the US, it makes this dish so tasty. I almost felt like I was home. In the store, Sha Cha Sauce is actually spelled 'Sa Cha'. If you cannot find razor clams with shell on, you may substitute razor clams with Manila clams. It will be also delicious.

2 tablespoons vegetable oil
2 teaspoons finely shredded fresh ginger
1 pound live razor clams
1?½ tablespoons sa cha sauce
½ cup water
1 tablespoon thinly sliced red bell pepper
2 green onions, cut into thin strips

Steps:

  • Heat the vegetable oil in a large skillet over high heat. Stir the ginger into the hot oil, and cook until fragrant, about 30 seconds. Add the razor clams in their shells, and cook until all of the clams have opened, about 2 minutes. Stir in the sa cha sauce and water, and bring to a boil. Toss with the bell pepper and green onions to serve.

Sep 15, 2021 · Add the cooking oil to the hot pan. Add the peppers, onion slices, garlic, and ginger to the oil. Stir fry until aromatic and the onions begin to wilt, approximately 2 to 3 minutes. Stir in the shrimp and cook until just barely starting to turn pink, about 30 seconds to 1 minute. Add the sha cha sauce and stock to the wok or pan.
