Total Time 40 minutes

Prep Time 10 minutes

Cook Time 30 minutes

Yield 4

Number Of Ingredients 6

1 1/3 cups Arborio rice
1 piece Onions (chopped)
125 grams Butter
1 tbsp Olive oil
1/2 Red or White wine
1 liter Meat or Vegetable broth

Steps:

  • In a saucepan, sauté onion, butter, and olive oil for a few minutes. Do this until the onions become soft and a bit golden.
  • Add the rice and mix well. Make sure to coat all the rice grains with the butter and oil. So toast the rice with the mixture for a couple of minutes or so. This technique is called tostatura in Italian.
  • Then, slowly add the wine into the mix. Let this simmer over medium low heat until the wine is absorbed by the rice. The wine will add a deliciously decadent flavor to your rice. This is what makes risotto dishes quite flavorful.
  • Here, it gets a bit tricky. Once the wine is almost all gone, slowly add a small amount of the broth. Stir until the broth is absorbed by the rice.
  • Once the liquid looks like most of it has been absorbed, add a bit more of the broth again. Do this several times, and in small amounts, until the rice is cooked and the surrounding mixture looks creamy.
  • Remove from heat and add cubes of butter and some grated Parmesan cheese. Let that settle for a few minutes before stirring it. And if you prefer, you can also add salt and pepper, to taste.
  • Serve on a warm flat plate and garnish with a few dashes more of Parmesan cheese.

SEAFOOD RISOTTO | JAMIE OLIVER PASTA & RISOTTO RECIPES

Seafood Risotto | Jamie Oliver pasta & risotto recipes image

Perfect for the weekend, this amazing risotto will blow everyone away. Slow-roasting the tomatoes transforms them into incredibly sweet, vibrant bombs of goodness that will explode in your mouth, while the combination of delicate seafood is a real treat. An utterly decadent dish, but totally worth it.

Total Time 1 hours 10 minutes

Yield 6

Number Of Ingredients 19

400 g mixed cherry tomatoes on the vine
2 cloves of garlic
½ a bunch of fresh rosemary (15g)
olive oil
6 raw langoustines or large king prawns, shell on, from sustainable sources
300 g mussels scrubbed, debearded, from sustainable sources
500 g clams scrubbed, from sustainable sources
4 medium squid cleaned, gutted (300g total), from sustainable sources
300 g cooked white crab meat from sustainable sources
1 pinch of saffron
1 large onion
1 heart of celery
1 bulb of fennel
400 g risotto rice
½ a glass of white wine or rosé wine
1.6 litres quality fish stock (see tip)
1 knob of butter (30g)
30 g Parmesan cheese
extra virgin olive oil

Steps:

    1. Preheat the oven to 160°C/325°F/gas 3.
    2. Blanch the tomatoes in a large pan of boiling water for 30 seconds. Remove with a slotted spoon to a bowl of ice-cold water and peel the skins. Tip into a medium roasting tray.
    3. Peel and slice the garlic, pick the rosemary leaves and scatter over the tomatoes. Drizzle over a little oil, then toss to coat and space them out in a single layer. Roast for 40 minutes, or until golden.
    4. Remove the heads and tails from the langoustines, then peel the skin and roughly chop the sweet meat. Check the mussels and sort through the clams, giving any that aren’t tightly closed a tap. If they don’t close, discard them. Finely slice the squid and reserve for later. Pick through the crab meat, removing any shell.
    5. Put the saffron in a small bowl, cover with 50ml of freshly boiled water and leave to infuse.
    6. For the risotto, peel and finely chop the onion, celery and fennel, reserving any nice leaves and herby tops for garnish, then place in a large, high-sided pan on a medium heat with 3 tablespoons of olive oil. Cook for 15 minutes, or until softened but not coloured, stirring occasionally, then stir in the rice to toast for 2 minutes.
    7. Pour in the wine, and stir until absorbed. Add a ladleful of stock and wait until it’s been fully absorbed before adding another, stirring for around 10 seconds every minute and continuing to add ladlefuls of stock until the rice is soft and a pleasure to eat, but retains its shape and a tiny bit of bite. It will need 16 to 18 minutes,
    8. Add the saffron and its soaking liquid, then stir in the mussels and clams.
    9. When the mussels are just starting to open up, go in with the squid, crab and langoustine. Beat in the butter, finely grate and and beat in the Parmesan, then season to perfection and turn the heat off. Cover the pan and leave to relax for 1 to 2 minutes so the risotto becomes creamy and oozy. Beat again, adding a little extra stock if necessary.
    10. Carefully pour the risotto onto a large platter and discard any mussels or clams that remain closed. Dot over the roasted tomatoes, scatter over the reserved celery leaves and herby fennel tops, then drizzle with a little extra virgin olive oil. Dish up and enjoy!

    1. Preheat the oven to 180°C/350°F/gas 4. Scrub the squash (there’s no need to peel it), carefully halve it lengthways and deseed, then chop into 2cm chunks.
    2. Place the squash in a roasting tray, pick and chop most of the marjoram leaves, then toss with 1 tablespoon of olive oil and a pinch of sea salt and black pepper. Roast for 1 hour, or until soft and caramelised.
    3. With 20 minutes to go on the squash, simmer the stock over a low heat. Peel and finely chop the onion and celery, then place in a high-sided pan on a medium heat with ½ a tablespoon of olive oil. Cook for 10 minutes, or until softened but not coloured, stirring regularly, then stir in the rice to toast for 2 minutes.
    4. Pour in the wine and stir until absorbed. Add a ladleful of stock and wait until it’s been fully absorbed before adding another, stirring constantly and adding ladlefuls of stock until the rice is cooked – it will need 16 to 18 minutes.
    5. Remove the squash from the oven and mash up with a fork – I like to do half smashed and leave half chunky, then stir through the risotto about halfway through.
    6. Meanwhile, trim the broccoli, halving any larger stalks lengthways to help it cook evenly. Steam for 2 minutes, or until just cooked but still full of colour, then toss with the lemon juice and a drizzle of extra virgin olive oil, and season to perfection.
    7. When the risotto is done, add enough extra stock or boiling kettle water to make the risotto oozy, then finely grate in the Parmesan, and beat in with the butter.
    8. Cover the pan, turn off the heat and leave to relax for 2 minutes. Stir, season to perfection, then divide between your plates.
    9. Pick over the remaining marjoram and serve topped with the broccoli. Lovely.

GLUTEN FREE PASTA | PASTA RECIPES | JAMIE OLIVER
Once you’ve mastered this simple dough recipe, use it in all your favourite pasta recipes.

    1. Place the ingredients in a food processor and blitz to a rough dough. Tip out onto a flour-dusted surface and knead for 3 to 5 minutes, or until smooth.
    2. Cut the dough into four pieces, then carefully press a portion out flat with your fingertips and start to roll it out using a pasta machine. Start at the widest setting and roll the dough through it, lightly dusting with the rice flour if it sticks. Roll the pasta through the widest setting a second time, then click the machine down a setting and roll the dough through again.
    3. Now, start clicking the settings down, rolling the pasta through each setting twice – gluten-free pasta isn’t as elastic as standard pasta, so make sure you avoid using the two narrowest settings, otherwise it may rip. Once you have a thin sheet of pasta (about 2mm thick), set aside on a flour-dusted surface and cover with a damp tea towel to avoid it drying out, then continue with the remaining dough.
    4. Now’s the time to transform your dough into whichever variety of pasta you like. If you want to make tagliatelle, roll the pasta through the tagliatelle setting on your pasta machine, or use a sharp knife to slice the pasta sheets lengthways into long strips (roughly 7mm thick), placing on a flour-dusted tray as you go. To cook, place in a pan of boiling salted water for around 3 minutes, or until al dente, then serve how you like it.

WHAT IS RISOTTO? | ALLRECIPES
Jun 04, 2019 · Risotto can also be made from any other small, starchy grain such as pearl barley, brown rice, spelt, or buckwheat. These whole grains might yield a less creamy and chewier risotto than with the traditional risotto rice but the results are just as delicious as classic risotto. You can also cook a mock risotto with orzo pasta.
