What is the McDonald's sign referring to when it says "Over 100 billion served?" That's not the number of customers served, but the number of beef patties sold since McDonald's first opened its doors in the forties. A hamburger counts as one patty. A Big Mac counts as two. McDonald's sold its 11 billionth hamburger in 1972, the same year that this sandwich, the Quarter Pounder, was added to the growing menu. That was also the year large fries were added and founder Ray Kroc was honored with the Horatio Alger Award (the two events are not related). In 1972, the 2,000th McDonald's opened its doors, and by the end of that year McDonald's had finally become a billion-dollar corporation. Beer, cheese and pretzels are all perfectly acceptable party foods on their own, but we’re wondering, “What if we combine them all together?” The answer is simple. You get the most game day-friendly food known to humankind. This garlic-seasoned cheesy dip gets better when you eat it with a cold bottle of beer, and the warm, lightly salted pretzels are the perfect dipping companion.

1 can (11 oz) refrigerated Pillsbury™ Original Breadsticks (12 Count)
2 tablespoons unsalted butter, melted
Pretzel salt
2 tablespoons unsalted butter
2 tablespoons flour
1 teaspoon garlic powder
1 teaspoon dried parsley
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 cup lager beer
8 oz cheddar cheese, grated

Steps:

  • Preheat oven to 375°F. Unroll breadsticks and work with one at a time. Roll it out into a thin strip and then fold it into a pretzel shape. Place pretzels on a baking sheet lined with parchment paper and brush with melted butter. Sprinkle with pretzel salt.
  • Bake 12-14 minutes until golden brown.
  • For dip, add butter and flour to a medium pot over medium heat. Whisk together to form a roux as the butter melts. Add garlic powder, parsley, salt, and pepper and cook roux for 1-2 minutes.
  • Whisk lager into the roux slowly until it thickens. It should be a gravy consistency. If it’s very thick, add more beer by the quarter cup.
  • Once mixture is together, add grated cheese and whisk until melted.
  • Serve beer cheese dip immediately with soft pretzels or chips.

  • Preheat the oven to 180°C/350°F/gas 4. Wash the squash, then carefully quarter it lengthways and remove the seeds, placing the squash in a roasting tray, skin side down. Peel, quarter and scatter over the onions, drizzle with 1 tablespoon of oil, add the cinnamon, ground coriander and a pinch of sea salt and black pepper, finely grate over half the nutmeg, then toss together. Pack in the stuffing and drizzle with 1 more tablespoon of oil, then cover with greaseproof paper, tying it in place with string. Bake for 1 hour to 1 hour 10 minutes, or until golden and gnarly. Use the greaseproof paper to help you lift it out of the bowl, then confidently flip it on to a plate and serve.

    1. Heat a griddle pan until it is screaming hot – this will take about 5 minutes. Meanwhile, cut the ciabatta in half lengthways, then cut into four equal-sized pieces, about 10–12cm/4–5 inches square.
    2. Place the sliced avocado in a bowl and squeeze over some lemon juice to stop it from discolouring. Using a speed peeler or potato peeler, slice the cucumber into long, thin strips on top of the avocado. Add the herbs and cress.

If you feel it needs more dressing, add a little extra, but try not to go overboard – you want it to be very light. Top the smoked salmon with the salad. Finish your delicious starter with a sprinkling of toasted seeds, using half a tablespoon per plate, and garnish with a wedge of blood orange.
