Not knowing what to fix for breakfast can be a real chore. This was the result of "I'm tired of the same old thing". Served this with homemade biscuits and sliced tomatoes. Makes two generous servings.

Number Of Ingredients 10

1 -2 tablespoon olive oil
1 medium red skin white potato, washed
1/2 medium red bell pepper, diced
3 -4 green onions, washed and sliced
1/2 cup sliced mushrooms
3 slices Canadian bacon, diced
1 cup egg substitute or 4 eggs, beaten with
1/4 cup milk
1/4 cup shredded mozzarella cheese
salt and pepper

Steps:

  • Using medium shredder blade of food processor, shred the potato.
  • Warm olive oil in non-stick skillet, add potato, bell pepper, green onions, mushrooms and bacon.
  • Cook and stir until potato is lightly browned and other vegetables are crisp tender.
  • Add salt and pepper to taste, pour egg mixture over vegetables.
  • Cook until eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan.
  • When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely.
  • The last few minutes top with shredded cheese and cover until cheese melts.
  • Cut in half and slip onto serving plates.

1 medium Sweet red pepper(s) cut into thin strips
0.5 cup(s) 2% reduced fat milk
1 tsp Kosher salt
0.5 tsp Black pepper
0.5 tsp Dried thyme
12 large egg(s) Egg(s)
0.75 cup(s), shredded Reduced fat sharp cheddar cheese made with 2% milk
0.25 cup(s) Chives chopped

Steps:

  • Preheat the oven to 400°F. Coat a large (18-by-13-inch) sheet pan with cooking spray.
  • Combine the zucchini, squash, tomatoes, and bell pepper on the prepared pan and spread into an even layer, avoiding overlap as much as possible. Bake at 400°F until the vegetables are crisp-tender, about 15 minutes.
  • Reduce the oven temperature to 350°F. In a large bowl, whisk the milk, salt, black pepper, thyme, and eggs. Fold in the cheese and chives. Pour the eggs over the vegetables on the pan, stirring to redistribute the cheese and chives if necessary.
  • Bake at 350°F until the eggs are set, 15 to 17 minutes. Run a thin knife or offset spatula around the edges of the frittata to loosen it from the pan. Store the frittata in the refrigerator for up to 5 days or freeze for up to 1 month.
  • Serving size: 1/12 of frittata
