1/4 lb cooked ham or 4 slices bacon, diced
1 green bell pepper, chopped
1 medium onion, chopped
4 eggs
salt
pepper
butter
bread, for toast

Steps:

  • cook bacon or ham in butter in pan to desired preference.
  • Toss in green pepper and onion and cook until vegetables are almost tender.
  • Beat eggs in a bowl with salt and pepper.
  • Pour over mixture in skillet and cook until eggs are set.
  • Turn with a spatula and brown second side lightly.
  • Place between 2 slices of buttered toast.

2 teaspoons butter, divided
? cup sliced fresh mushrooms
¼ cup chopped green bell pepper
2 green onions, sliced on the bias
¼ cup cooked ham strips
salt and ground black pepper to taste
2 eggs

Steps:

  • Melt 1 teaspoon butter in a small skillet over medium heat. Add mushrooms, bell pepper, and green onions; cook until tender, about 5 minutes. Stir in ham until heated through, about 1 minute. Season with salt and pepper. Set filling mixture aside in a small bowl and keep warm.
  • Beat eggs together in a bowl; season with salt and pepper.
  • Heat the same skillet over medium-high heat. Add remaining 1 teaspoon butter; heat until foaming. Pour in eggs and cook for 30 seconds. Lift the edges of the omelet so that the uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set but still moist and soft, about 2 minutes.
  • Spread the filling over one side of the omelet. Fold the other half over the filling and slide omelet onto a plate.

  • Slice mushrooms. Dice green pepper, onion, and turkey-ham. In nonstick 10-inch skillet over medium-high heat, in 1 tablespoon hot salad oil, cook mushrooms and 1/4 teaspoon salt until any liquid evaporates and mushrooms are golden brown; remove to bowl; keep warm. Reduce heat to medium. In 1 more tablespoon hot salad oil, cook onion 5 minutes, stirring occasionally. Stir in green pepper and cook until onion is very tender and green pepper is lightly browned, about 5 minutes longer. In medium bowl, with fork, beat liquid whole eggs, 1/4 teaspoon salt, turkey-ham, and 2 tablespoons water. Pour egg mixture into onion mixture in skillet. Reduce heat to medium-low and cook until eggs are set around edge; with spatula, gently lift edge as it sets, tilting skillet to allow uncooked portion to run under egg mixture. Place English muffins, cut-side up, on cookie sheet. Broil English muffins until lightly browned. Cut omelet into quarters. On bottom half of each English muffin, place 1 quarter of omelet, folding omelet over slightly to fit. Spoon sautied mushrooms over sandwiches. Replace tops of muffins. Arrange sandwiches on platter with cherry tomatoes.
