This is a quick, tender & light buttermilk biscuit, which requires no kneading. I took a couple different recipes of my grams and combined aspects of both and this is what I ended up with. The family loved them. Reheats well too! Nothing better than a hot biscuit from the oven slather with butter. Yum! Enjoy!

Number Of Ingredients 6

2 cup(s) flour
1 teaspoon(s) salt
1/2 tablespoon(s) sugar
1 1/2 tablespoon(s) baking powder
2/3 cup(s) shortening
1 cup(s) buttermilk

Steps:

  • Preheat oven to 400 degree F In a large bowl, whisk together the dry ingredients. With a pastry blender, blend in the shortening until crumbly looking.
  • Stir in milk, just until all is moistened. Pour mix on a floured surface and pat together with floured hands. Do not knead. Pat out to about 3/4 inch thick and cut with 3 inch biscuit cutter, do not twist as you cut. * Could also be rolled out and cut.
  • Place on ungreased sheet or line with parchment as I did. They can also be baked in a round cake pan. Brush tops with buttermilk or butter. Place in oven for 15 - 20 minutes or until lightly golden and no longer doughy.
  • Serve hot with butter or jam. Makes a great biscuit for sausage gravy as well.

These biscuits are literally swimming in butter prior to baking, hence the name. No need to butter them since they are buttery and fluffy. Perfect for breakfast or for dinner. Great use of pantry items during this stay-at-home order during the Coronavirus pandemic.

Number Of Ingredients 6

½ cup unsalted butter
2?½ cups all-purpose flour
4 teaspoons baking powder
4 teaspoons white sugar
1 teaspoon salt
1?¾ cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Place butter in an 8x8-inch glass or ceramic baking dish. Microwave for 1 minute. Stir butter and keep microwaving at 20-second intervals until butter is fully melted.
  • Sift flour, baking powder, sugar, and salt into a bowl. Add buttermilk and stir until combined. Pour over melted butter and spread over the melted butter. Use a bench scraper to cut dough into 9 equal pieces.
  • Bake in the preheated oven until biscuit tops start to brown, 20 to 25 minutes.
