Smoked paprika and fresh herbs take George Mendes' crustaceans from everyday to ethereal. The best way to peel shrimp is to first remove the legs and then slide the rest of the shrimp from the shell. To devein the shrimp, use a small knife to cut through the back of the shrimp and then lift out the vein. Shrimp cooks quickly so you want to be sure to watch them carefully while they cook. It takes only a few minutes for them to cook. You'll know that they're done when they start to turn pink. Serve this dish over rice or pasta with a side salad.

4 tsp Olive oil extra-virgin, divided
20 large Uncooked shrimp peeled and deveined
6 medium clove(s) Garlic clove(s) minced
1.5 tsp Paprika pimentón variety (sweet smoked paprika)
1 Tbsp Fresh parsley chopped
1 Tbsp Cilantro fresh, chopped (plus more for garnish)
0.5 tsp Fresh lemon juice
1 pinch(es) Table salt

Steps:

  • Heat a large skillet over high heat until very hot. Lightly coat bottom of pan with 1 tsp oil; heat until lightly smoking. Add half of shrimp in a single layer. Cook just until golden and orange, 10 seconds; flip shrimp quickly. Cook 10 seconds more; immediately transfer to a plate. Repeat with remaining shrimp and 1 tsp oil.
  • Reduce heat to medium-high; add remaining 2 tsp oil. Add garlic; cook, stirring, until light golden but not browned, about 2 minutes. Stir in pimentón; return shrimp to pan. (If pan is too small to hold shrimp, divide ingredients in half and cook in two batches.)
  • Reduce heat slightly and cook shrimp until done, about 1 minute; fold in parsley, cilantro, lemon juice and salt.
  • Serve shrimp with pan sauce spooned over top; garnish with cilantro.
  • Serving size: 5 shrimp

One of the best creole dishes served all over Louisiana can be on your table tonight in just 45 minutes. The warm bowl of spicy tomato-based shrimp stew served over rice is a wonderful tradition and pleasing to adults and kids alike. The tender crunch of the trinity vegetables, bell pepper, onion and celery create the vegetal fragrance and enriches this one-pot dish. We gave our creole extra sizzle by using hot, smoked Spanish paprika. If you can't find it, use ground, smoked chili powder instead.

1 Tbsp All-purpose flour
1 rib(s), medium Uncooked celery chopped
1 small Uncooked onion(s) chopped
1 medium clove(s) Garlic clove(s) minced
1 medium Green pepper(s) chopped
14.5 oz Canned diced tomatoes drained
2 Tbsp Canned tomato paste
2 fl oz Red wine
1 cup(s) Fat free chicken broth
1 leaf/leaves Bay leaf
0.125 tsp Paprika smoked, hot Spanish variety
0.25 tsp Dried basil
0.25 tsp Dried oregano
0.5 tsp Table salt or more to taste
0.25 tsp Black pepper
1 pound(s) Uncooked shrimp peeled and deveined
2 Tbsp Uncooked scallion(s) minced
1 Tbsp Fresh parsley Italian, fresh, minced
1 Tbsp Fresh lemon juice
2 cup(s) Long grain cooked brown rice

Steps:

  • Heat oil in a large skillet; stir in flour and cook over low heat, stirring occasionally, until mixture is smooth, about 5 minutes. Stir in celery, onion, garlic and green pepper; sauté 5 minutes. Add canned tomatoes, tomato paste, wine, broth, bay leaf, paprika, basil, oregano, salt and pepper. Bring to a boil; reduce heat to low.
  • Stir in shrimp and simmer 5 minutes. Stir in scallions, parsley and lemon juice; simmer 1 minute. Remove bay leaf. To serve, spoon 1/2 cup of rice into each of 4 bowls and top each with about 2 cups of shrimp creole.

My SIL gave me this recipe and said it's only 5 points per cup of soup. I cannot attest to how many points, but it is low fat. I've made this a few times, but have to admit I "fattened" it up, but the low-fat version is still very tasty. If you want a dish to serve for a special dinner or to company that is very rich you would need to make the following changes: Saute' your vegetables in 6 tablespoons butter over medium-high heat until onions are lightly carmelized. Substitute regular cream cheese for low fat, regular Cream of Mushroom Soup for the reduced fat version and heavy whipping cream for the fat free milk. Also, add one can (14 ounces) chicken broth. I also use double the amount of chopped onion when I make it. Yes, it does add quite a few calories and fat grams, but it is for a special occasion and you don't eat it every day. DH proclaimed this was his favorite soup (the "fattening" version. BTW, a friend who made it thought it had too much black pepper so please use your own personal preference in that area.
