This colorful salad has something for everyone. You can buy pre-cut ingredients from a salad bar and use your favorite bottled low-fat Italian dressing to save time—just keep in mind that this could potentially affect the nutritional info for this recipe. You can use any shape pasta or combination of pastas that you prefer for a fun presentation. The pasta salad also features green and red peppers, grape tomatoes, summer squash, zucchini, and green peas for a variety of flavors and textures. After you assemble it, it can hang out in the fridge to let all the ingredients meld together for 2 hours so it's ready to go to the pot-luck when you are.

4 oz Uncooked whole wheat pasta corkscrew shape (about 1 1/2 cups)
4 oz Uncooked whole wheat pasta macaroni shape (about 1 1/2 cups)
0.333 cup(s) Olive oil extra virgin
0.25 cup(s) Fresh lemon juice
1 tsp Dried oregano
1 Tbsp Dijon mustard
0.5 tsp Table salt
0.25 tsp Black pepper
2 medium clove(s) Garlic clove(s) minced
2.5 oz Olive(s) canned, sliced, black (about 10 medium olives)
1 medium Green pepper(s) chopped (about 1 cup)
1 medium Sweet red pepper(s) chopped (about 1 cup)
0.75 cup(s) Grape tomatoes or other small tomatoes, halved (about 10 tomatoes)
1 medium Yellow summer squash halved lengthwise and sliced (about 1/2 cup)
1 medium Uncooked zucchini halved lengthwise and sliced (about 1/2 cup)
1 cup(s) Frozen green peas thawed

Steps:

  • Cook pasta according to package directions; drain. Rinse pasta with cold water; drain again and set aside.
  • Meanwhile, in a small bowl, prepare salad dressing by mixing together oil, lemon juice, oregano, mustard, salt, black pepper and garlic; set aside until ready to use.
  • In a large bowl, combine cooked pasta with vegetables; pour in dressing and toss thoroughly to coat. Cover and chill about 2 hours. Yields about 1 cup per serving.

This is a weight watcher recipe, and one of my favorites. My whole family loves this. It is only 3pts for 1 cup! I didn't see it posted anywhere, and thought I would share it. It is so simple and good. Servings are a guestimate, as my family doesn't have to stick to one cup.

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper

Steps:

  • In a large bowl mix together shell, bacon, tomatoes, and lettuce.
  • In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
  • Pour over shell mixture, stir and chill.
