Our version of this French-inspired favorite is easy to prepare and ready to serve in just under an hour. Pounding the chicken evenly is key to getting all of the ingredients stacked and rolled evenly. The layers of flavor created by flouring the rolls, then coating them with honey mustard before finishing with breadcrumbs make the perfect crispy-delicious outer shell to the tender chicken, smoked ham and gooey Swiss cheese. Excellent for children but nice enough for a special dinner, this dish makes an ideal main for Easter and Mother's Day meals. Serve with seared green beans and a simple green salad. Trade the honey mustard out with a nice Dijon mustard for a more zingy flavor. Try haricot vert or French green beans. If you have true baby carrots with tops in your supermarket, buy a bunch, cut off the green tops and roast them whole until tender and slightly caramelized for a stunning side dish.

3 oz Cooked lean ham four 3/4 oz slices
3 oz Low-fat Swiss cheese four 3/4 oz slices
0.25 cup(s) All-purpose flour
0.25 cup(s) Honey mustard
0.5 cup(s) Seasoned breadcrumbs Italian-style

Steps:

  • Preheat oven to 400°F. Coat a baking sheet with olive oil cooking spray.
  • Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.
  • Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends. Secure with toothpicks.
  • Place flour, honey mustard and bread crumbs in 3 separate shallow bowls. Add chicken to flour; turn to coat. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.
  • Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes. Remove toothpicks and serve.

0.25 tsp(s) Table salt
1 oz Prosciutto or other brand, very thinly sliced
2 oz Low-fat Swiss cheese or Jarlsberg, thinly sliced
0.333 tbsp(s) Dried plain breadcrumbs plain-variety
0.333 cup(s) Fresh parsley fresh, minced
2 tbsp(s) All-purpose flour
2 egg white(s), large Egg white(s)
2 spray(s) Cooking spray
0.5 tbsp(s) Unsalted butter
0.5 tbsp(s) Olive oil

Steps:

  • Place chicken between two sheets of wax paper; using a rolling pin, pound chicken to 1/4-inch thickness.
  • Rub chicken with 1/4 teaspoon each pepper and salt. Evenly divide prosciutto and cheese over chicken; fold chicken in half to cover prosciutto and cheese and press down to hold shape.
  • In a shallow bowl, combine bread crumbs, parsley and remaining 1/4 teaspoon pepper. Place flour on a plate. In another shallow bowl, whip egg whites until soft peaks form.
  • To coat chicken, dredge each piece of chicken in flour; turn to coat. Then dip each chicken breast in egg whites; turn to coat. Next, dredge chicken in bread crumb-mixture and press down to make sure all sides are covered. Repeat until all four chicken breasts are coated.
  • Coat a large skillet with cooking spray and set over medium-high heat; add butter and oil. When they begin to shimmer (about 1 or 2 minutes), place chicken in a single layer in skillet; cook, flipping once, until nicely browned and chicken is completely cooked through, about 6 to 8 minutes. Serve immediately. Yields 1 chicken breast per serving.
