Our cheesy broccoli soup is so rich and delicious you'll never believe it's light. The secret is the touch of cornstarch that lends body to the skim milk, chicken broth, and cheese base, which tricks the palate into thinking you're indulging in something so creamy that it surely must be forbidden. Sweet sauteed onions and a touch of garlic powder add robust, savory flavor to the soup while it simmers. Of course, you could beef up the vegetables here if you'd like. Diced red bell pepper would add a pop of color a bit more sweetness, while a minced jalapeño, seeds and all, would make things spicy.

2 tsp Olive oil
0.5 cup(s) Uncooked onion(s) minced
16 oz Frozen chopped broccoli
29 oz Canned chicken broth
4 oz Low fat cheddar or colby cheese cut into cubes
0.5 cup(s) Fat free skim milk
0.5 tsp Garlic powder
0.5 cup(s) Water
0.25 cup(s) Cornstarch

Steps:

  • In a large saucepan, heat the oil over medium-high heat. Add for onion and cook until soft, about 3 minutes. Add the broccoli and the broth and bring it to a boil; reduce the heat to medium and simmer until the broccoli is tender, about 3 minutes.
  • Reduce the heat to low, add the cheese and stir until the cheese melts; stir in the milk and garlic powder.
  • In a small dish, whisk together the water and cornstarch. Add the mixture to the pan and simmer until the soup thickens, about 2 minutes. Serve hot.
  • Serving size: about 1 1/2 cups.

I got this recipe from someone at my Weight Watchers meeting. I don't know where the original recipe came from. It's very low points and I can eat it every day without getting tired of it.

3 (14 1/2 ounce) cans chicken broth
2 (1 lb) bags frozen broccoli
1 (10 1/2 ounce) can rotel brand tomatoes and green chilies
10 ounces Velveeta reduced fat cheese product

Steps:

  • Mix chicken broth, frozen broccoli and tomatoes and chilies together.
  • Simmer for 25 minutes or until veggies are tender.
  • Cube Velveeta and put into soup pot.
  • Simmer just until cheese is melted.
  • This recipe freezes and refrigerates well. I make a large recipe at the beginning of the week and use it to snack on when I'm in danger of breaking my diet. I can have a large bowl and some crusty bread with it and still be under 5 points.

This is a low-fat recipe I got out of one of my moms weight watchers cookbook and I've been making it for years. The DH loves it and it's great to make on cold days and fine for big portions. SPECIAL NOTE: This soup can easily be modified. Add more ham and cheese if you’d like, or add cubed chicken or Turkey instead of ham. If you add more veggies and need more water to boil them, use 2 bouillon cubes to every cup of water you add and 2 Tablespoons of Flour to every cup of milk to thicken it up. I serve the soup with Cheddar Cheese Popovers. NOTE: If you are doing the 2012 version of WW, it has 11 points per serving as written.
