¼ cup of unsalted butter
1 tbsp olive oil
¼ mince shallots
2 tbsp white balsamic vinegar
1 tbsp drained capers
1 tbsp chopped rosemary
115 ounces can white beans
1 tsp lemon peel, finely grated
210 ounce cleaned boned butter flied trout
1 cup coarsely arugula slice

Steps:

  • Prepare barbecue for medium-high heat. Cook butter within small skillet until brown. Stir the butter often, for about 4 minutes. Remove from the heat. Mix oil, shallots, capers, vinegar, rosemary and season with vinaigrette and taste with salt and pepper.
  • Mix white beans, lemon peel, and vinaigrette in medium skillet. Season the fish with salt and pepper.
  • Brush little vinaigrette over the flesh side from trout, sprinkle with salt and pepper. Place skillet with white beans in edge of grill to warm it enough. Grill trout and flesh side down until it gets brown. Usually it takes about 3 minutes. Turn out over trout, grill until it cooked well for next 2 minutes. Transfer trout to plates and mix arugula into warm beans, spoons to trout.

1 1/2 lbs tilapia fillets or 1 1/2 lbs other white fish
1/4 cup white cornmeal (or yellow)
1/4 cup dry breadcrumbs (I use seasoned)
1/2 teaspoon dried dill
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon paprika
1/3 cup skim milk
3 tablespoons butter, melted

Steps:

  • Preheat oven to 450 degrees.
  • In a shallow dish, like a pie plate, combine all dry ingredients.
  • Place milk in another shallow dish.
  • Dip fish in milk, then in crumb mixture.
  • Place in pan coated with cooking spray.
  • Drizzle with melted butter.
  • Bake for 10 minute or until fish flakes apart with fork.

  • "If frozen, thaw the fish overnight in the refrigerator. Turn on oven and allow to preheat to 350 degrees F (moderate). While the oven is preheating: Assemble all necessary ingredients to work area. Grate the lemon rind and place in a bowl. Cut the lemon and squeeze. Measure 4 tsp and place in a bowl. Measure butter, salt, pepper and Rosemary and add to bowl. Microwave or place in oven until butter is melted. Mix well. Divide the fish into 6 servings and place in a single layer in a baking dish. Pour the butter seasoning mixture evenly over the fish. Bake for 25 minutes or until the fish flakes easily."
