1 tablespoon lemon rind, grated
3 tablespoons lemon juice
3 tablespoons extra virgin olive oil
4 garlic cloves, crushed
1 tablespoon black peppercorns, cracked
1/2 teaspoon salt

Steps:

  • Mix all the ingredients in a large glass bowl. Add your meat of choice (1 lb boneless or 2 lb bone-in). Stir to incorporate, cover and refrigerate for 4 hours (if using any type of seafood only marinate for 30 minutes).

8 Chicken (Legs with thighs attached)
1/2 c olive oil
Salt
1/3 c Lemon juice
1 tb fresh rosemary Chopped

Steps:

  • "Combine the olive oil, lemon juice, rosemary and a generous amount of black pepper in a bowl. Pour this marinade over the chicken legs in a shallow dish. Cover and let marinate in the refrigerator overnight or for at least four hours. Remove the chicken from the marinade and sprinkle with salt. Cook over a medium-hot grill or under a preheated broiler. Turn the chicken pieces over several times while cooking and brush with the marinade. Cook for about 35 minutes.
