Grilled Corn on the Cob with Basil-Parmesan Butter

Number Of Ingredients 7

¼ cup/55 grams (½ stick) unsalted butter, softened
¼ cup/25 grams freshly grated Parmigiano-Reggiano® cheese
2 tablespoons finely chopped fresh basil leaves
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
¼ teaspoon granulated garlic
4 ears fresh corn, husked

Steps:

  • Prepare the grill for your grilled corn on the cob with direct cooking over medium heat (350° to 450°F).
  • In a small bowl mash the butter ingredients with the back of a fork and then stir to distribute the seasonings throughout the butter. Brush about 1 tablespoon of the seasoned butter all over each ear of corn.
  • Brush the cooking grates clean. Grill the corn over direct medium heat, with the lid closed, until browned in spots and tender, 10 to 15 minutes, turning occasionally. Remove from the grill and serve warm your perfectly grilled corn on the cob with the remaining butter spread on the corn.

Mexican-Style Corn on the Cob

Number Of Ingredients 7

3 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon fresh lime juice
3 tablespoons grated cotija or Parmigiano-Reggiano® cheese
¾ teaspoon prepared chili powder
¼ teaspoon chipotle chile powder
4 ears fresh corn, husked

Steps:

  • Prepare the grill for direct cooking over medium heat (350° to 450°F).    
  • In a small bowl combine the spread ingredients and mix well. In a second small bowl combine the topping ingredients and mix well.
  • Brush the cooking grates clean. Grill the corn over direct medium heat, with the lid closed, until the kernels are browned in spots and tender, 10 to 15 minutes, turning occasionally. Remove from the grill.
  • Smear the spread all over the corn and then season evenly with the topping. Serve right away.
