Yield BBQ Rub: Yield 3 Cups, BBQ Sauce: Yield 3 Cups

Number Of Ingredients 30

BBQ Rub
1/2 cup kosher salt
2 tbsp. granulated garlic
1 tbsp. ground black pepper
1/2 cup chili powder
2 tbsp. cumin
2 tbsp. Hungarian paprika
1 tbsp. smoked paprika
2 tsp. onion powder
1 tbsp. ground mustard
1 tsp. cayenne
2 tbsp. oregano
1/2 cup brown sugar
BBQ Sauce
2 cups ketchup
4 tbsp. BBQ rub (see above)
1/2 cup apple cider vinegar
1/4 cup brown sugar
2 tbsp. Worcestershire sauce
1/3 cup molasses
1 tbsp. Dijon mustard
2 tbsp. lemon juice
1-1/2 tbsp. liquid smoke
1 tbsp. kosher salt
1 tbsp. ground black pepper

Steps:

  • BBQ Rub and Sauce
  • Whisk all ingredients together in a bowl and store in an airtight container in the refrigerator. It will last for about a week in the fridge, longer if you omit the lemon juice.
  • The Ribs
  • Using a hacksaw or bone saw, cut a rack of game ribs perpendicular to the bones, so to get a 4-6 inch strip of connected rib bones.
  • Then cut these strips into pieces containing 3 or 4 ribs apiece.
  • Place the ribs into a pressure cooker or crock pot and add just enough stock or water to cover them.
  • Cook at full pressure for 30 minutes. If using a slow cooker, cook on high for 2 to 3 hours or low for 6 to 8 hours. By then, the ribs should be fairly tender. The measure of a perfectly cooked venison rib will be if the meat hangs on to the bone when picked up, but if you shook the bone the meat would start to fall off. A little resistance is not a bad thing.
  • Prepare a grill (gas or charcoal) at medium-high heat.
  • Remove the ribs from the slow cooker, let them cool, and then give them a generous rub-down with the rub.
  • Place the ribs on the grill.
  • Since they’re already cooked, you’re simply reheating the meat and charring the outside a bit.
  • Once the ribs have crisped, about 10 minutes, coat them generously with the barbeque sauce, and continue cooking for 1 to 2 minutes to allow the sauce to caramelize and thicken.
  • Serve warm.

4 tablespoons plain flour
800 g quality stewing venison or beef cut into 2cm chunks
olive oil
2 onions peeled and roughly chopped
3 carrots peeled and roughly chopped
2 sticks celery trimmed and roughly chopped
1 tablespoon juniper berries crushed in a pestle and mortar
2 sprigs of rosemary leaves picked and chopped
1 knob butter
6 sprigs of fresh flat-leaf parsley
2 organic beef stock cubes
600 g small new potatoes scrubbed clean, larger ones halved
1 clove garlic peeled and finely chopped

Steps:

    1. The Navajo love their lamb and mutton, but back in the day – at the right times of the year – they’d also get out there and hunt things like elk, which they’d stew with wild juniper berries. What’s amazing for me is that thousands of miles away in Britain we were hunting deer for venison and stewing that with juniper too. I guess some combos are just brilliant, no matter where you live. Don’t worry if you can’t get venison, because stewing beef will also be delicious. Really nice served with some rice, beans, a jacket potato or flatbreads, or, if you’re a bit more traditional, some nice steamed greens. A humble but delicious stew.
    2. Dust a chopping board with 2 tablespoons of flour and a good pinch of sea salt and black pepper, and toss your chunks of meat through this mixture until well coated. Heat a large pan on a high heat, add a few lugs of olive oil and fry your meat for 3 minutes to brown it. Add your chopped onions, carrots, celery, crushed juniper berries, rosemary and the knob of butter. Add a few tablespoons of water, give everything a good stir, then pop the lid on the pan and let everything steam for 4 to 5 minutes so the flavours really mingle together.
    3. Take the lid off so your meat and veg start to fry, and stir every so often for 5 to 10 minutes. Chop your parsley stalks finely, and once the onions start to caramelize, add them to the pan with your remaining 2 tablespoons of flour and your crumbled stock cubes. Stir, and pour in enough water to cover the mixture by a couple of inches. Put the parsley leaves aside for later.
    4. Bring to the boil, then turn the heat down to medium low so that the stew is just simmering. Add your potatoes and slow cook for at least 2 hours with the lid slightly askew, or until the meat falls apart easily. Keep an eye on it as it cooks, and add splashes of water if you think it looks too dry.
    5. Put your chopped garlic in the middle of a chopping board. Add most of your parsley leaves with a teaspoon of sea salt and half a teaspoon of black pepper. Chop everything together so you get a kinda chunky paste. Add this to the stew and stir through. Chop the last of your parsley leaves and sprinkle over before serving.

    1. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Place the venison bones in a large, deep roasting tray. Peel the onion, wash the carrot, then roughly chop with the celery, add to the tray with the flour and toss together.
    3. Roast for 1 hour, then use tongs to transfer everything to a big pot. Add enough boiling kettle water to the tray to scrape up the sticky goodness from the base, then pour that into the pot with the wine.
    4. Just cover with boiling water, then simmer on a low heat for 2 hours, skimming the surface and topping up the water occasionally, if needed.
    5. Carefully remove the bigger bones, then strain the sauce through a coarse sieve into a pan. Simmer on a low heat to the consistency of your liking, then turn the heat off.
    6. Get your meat out of the fridge and up to room temperature before you cook it.
    7. Crush the coffee beans and peppercorns in a pestle and mortar until fine, pick and pound in the rosemary leaves, then peel and crush in the garlic to make a rough paste.
    8. Finely grate in the orange zest and muddle in the balsamic. Cut each venison loin in half to give you four pieces, then rub the paste all over the meat.
    9. Divide the prosciutto between two large sheets of greaseproof paper, slightly overlapping the slices.
    10. Place two pieces of venison on top of each other on each one, spooning the meat so the thick and thin ends even each other out. Roll up in the prosciutto, tucking in the ends, tie with string at regular intervals to secure the prosciutto in place, then put on a roasting tray.
    11. To cook, drizzle the loins with a little oil, then roast in a preheated oven at 180ºC/350ºF/gas 4 for 30 minutes, turning every 10 minutes. Remove and rest for 10 minutes.
    12. Meanwhile, bring the sauce back up to a simmer, snap in the chocolate, add the butter, and whisk until smooth. Leave for a few minutes, then season to perfection.
    13. Remove the string from the venison, then carve and serve with the sauce. Delicious with celeriac mash and steamed seasonal greens.
