Ingredients

8 c. seedless watermelon chunks (about 11/2 lbs.), plus wedges for garnish
1 c. light rum
1 c. fresh orange juice
1/4 c. fresh lime juice
1 (12-oz.) bottle ginger beer

Steps:

In blender, puree watermelon until smooth. Pour through fine-mesh strainer into large pitcher; discard solids. Stir in rum, orange juice and lime juice. Refrigerate until ready to serve. To serve, add ginger beer. Serve on the rocks with watermelon wedges.

8 oz Captain Morgan White Rum
4 oz Captain Morgan Original Spiced Rum
4 oz fresh lime juice
2 oz agave nectar
1 large watermelon
12 lime wheels, for garnish
6-8 mint leaves, plus extra mint sprigs for garnish

Steps:

Cut off the top of the watermelon.
Scoop out the flesh until just before you hit the rind.
Reserve the scooped out flesh.
Insert a drink-dispensing tap into the watermelon.
Place the scooped-out flesh into a blender
Add Captain Morgan White Rum, Captain Morgan Original Spiced Rum, agave nectar, lime juice, mint leaves, and 4-5 cubes of ice.
Blend until smooth.
Strain the punch back into the hollow watermelon.
Garnish cocktails with mint sprigs and lime wheels.
Serving size: 12
