1 bunch Watercress
2 scallions
500 grams small, cooked potatoes
salt
freshly ground peppers
3 tablespoons White vinegar
5 tablespoons sunflower oil
1 carrot
1 small Beet
200 milliliters vegetable oil (for frying)

Steps:

  • Rinse watercress, trim and shake dry. Rinse scallions, trim and chop.
  • Slice potatoes.
  • Mix vinegar and oil in a bowl and season with salt and pepper.
  • Peel carrot and beet and cut into thin slices. Heat oil in a pan and fry carrot and beets in portions until crispy. Remove carrots and beets from the pan with a slotted spoon and drain on paper towel.
  • Mix watercress, scallions, potato, carrots and beets in a bowl, drizzle with vinaigrette, mix and arrange on plates. Serve immediately.

A real game-changer and a little bit different, this sauce is so easy to make and really very good when teamed with red meat like roasted rump.

85 g of watercress
10 small silverskin pickled onions
1 tablespoon of baby capers in brine
2 teaspoons of English mustard
8 anchovy fillets in oil from sustainable sources
2 thick slices of white bread (100g total)
extra virgin olive oil

Steps:

  • This recipe works great as a stand-alone dish, but also as a component in Jamie’s Steak night from Together – see the full collection of menus here. ON THE DAY Pack the watercress into a blender, discarding the tougher stalks. Add the pickled onions and a good splash of their liquor, the capers, English mustard and anchovy fillets. Remove the crusts from the bread, tear in the soft middles, add the extra virgin olive oil and 200ml of boiling kettle water, then blitz until silky smooth. Season to perfection, tasting and tweaking. Pour into a serving bowl, ready to serve at room temperature when your meal is ready.
