This is a very old-fashioned recipe. The cornbread is shaped into little cakes and fried, rather than baked. They are served with maple syrup or honey.

Number Of Ingredients 5

1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon shortening
¾ cup boiling water

Steps:

  • In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
  • Pour oil or bacon fat to a depth of 1/2 inch in a large skillet and heat to 375 degrees F (190 degrees C).
  • Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels. Serve at once with maple syrup or honey.

Hot Water Cornbread Recipe - Taste of Southern image

Quick and easy Hot Water Cornbread, takes just a few minutes to make. Serve it warm for best results.

Cook Time 5 minutes

Yield 4

Number Of Ingredients 4

¾ cup Yellow Corn Meal –self rising
¼ cup Self Rising Flour
½ teaspoon Salt
Hot water as needed, about one cup.

Steps:

  • Place the cornmeal in a small mixing bowl.
  • Add the flour.
  • Add the salt.
  • Use a fork to mix the dry ingredients together.
  • Gradually stir in enough hot water to make a thin batter.
  • Let the batter rest while you heat up your skillet.
  • Place a skillet over Medium heat on your stove top.
  • Add enough oil to slightly coat the bottom of the pan.
  • Use a ¼ cup measuring scoop to add batter to the hot oil.
  • Do not crowd the pan.
  • Watch for the bottom edges to turn brown, and for bubbles to appear in the batter.
  • When the top begins to dry, flip the cornbread over.
  • Let it cook for 2-3 minutes per side until done.
  • Remove from pan and place on folded paper towels to drain.
  • Serve warm.
  • Enjoy!

This recipe calls for less yeast due to the starch content in the potato water that contributes to the rising action. The first time I made this bread, the taste brought me back to the good ol' days!! A good and tasty way to use saved potato water!!! Because this bread browns up darker than most, I would suggest a light crust setting on your machine.
