With the spice of the 'nduja, the crunch and freshness of the vibrant tomatoes, and the creamy indulgent burrata, this fresh tomato salad is a great summer starter

tomatoes 400g, of mixed sizes and colours
sea salt flakes
olive oil 4 tbsp
shallot 1 small clove, finely diced
’nduja 25g (see cook's notes)
Italian red wine vinegar 2 tbsp
caster sugar 1 tsp
burrata 1
basil a handful of small leaves
crusty bread to serve (optional)

Steps:

  • Use a small serrated knife to slice the tomatoes thinly, then layer on a platter.
  • If the tomatoes have been in the fridge, do this at least 20 minutes before you want to eat to let them come up to room temperature.
  • Sprinkle with sea salt.
  • Heat the olive oil in a small pan over a gentle heat.
  • Add the shallot and cook until softened.
  • Remove from the heat and add the ‘nduja, whisking together. Whisk in the vinegar and sugar.
  • Tear the burrata over the tomatoes. Spoon over the dressing, then top with basil leaves.
  • Eat with crusty bread, if you like.

This Fall Harvest Apple Burrata Salad is the perfect autumnal, crisp and fresh salad to enjoy after an indulgent holiday weekend! Packed with minty arugula, crisp and tart honeycrisp apples, creamy burrata chunks and a drizzle of homemade maple vinaigrette!

Number Of Ingredients 9

1/4 cup extra-virgin olive oil
1/4 cup pure maple syrup 
2 tablespoon apple cider vinegar
2 tablespoons finely diced shallots or red onion
1/2 teaspoon salt ,or to taste
1/4 teaspoon freshly ground black pepper ,or to taste
4-5 cups organic baby Arugula (or Kale, watercress or spinach)
2 Honeycrisp Apples, thinly sliced
8 oz burrata cheese, torn into 4-5 chunks

Steps:

  • Whisk together the olive oil, maple syrup apple cider vinegar and diced shallot. Season the vinaigrette with salt and pepper, to taste, and whisk again until the vinaigrette is well mixed. Cover + refrigerate the vinaigrette until ready to serve the salad.
  • In a large bowl combine the arugula, sliced apple and burrata chunks. Drizzle on half of the maple vinaigrette and toss the salad. Let the salad sit for 5 minutes before serving, drizzle with more maple vinaigrette if desired. This salad goes perfect with a side of warm crusty bread!
