Cayenne pepper gives these slightly sweet walnuts a piquant kick.

Number Of Ingredients 8

1 tablespoon honey
2 teaspoons olive oil
2 cups walnut halves
2 tablespoons sugar
1 teaspoon coarse salt
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon cayenne pepper

Steps:

  • In a large nonstick skillet, heat honey, oil, and 1 tablespoon water over medium heat. Add walnuts; toss to coat.
  • Sprinkle the sugar, salt, cumin, coriander, and cayenne over the nuts. Cook, tossing and stirring until the nuts are well coated and lightly browned, 2 to 3 minutes. Transfer to a baking sheet to cool completely.

Sweet strawberries, salty feta and crunchy walnuts jazz up a simple spinach salad. The balsamic vinaigrette is incredibly easy; fresh shallots add more zip than you'll find in any commercial dressing.

1 ½ tablespoons extra-virgin olive oil
1 tablespoon best-quality balsamic vinegar
2 teaspoons finely chopped shallot
¼ teaspoon salt
¼ teaspoon ground pepper
6 cups baby spinach
1 cup sliced strawberries
¼ cup crumbled feta cheese
¼ cup toasted chopped walnuts

Steps:

  • Whisk oil, vinegar, shallot, salt and pepper in a large bowl. Let stand for 5 to 10 minutes to allow shallots to soften and mellow a bit.
  • Add spinach, strawberries, feta and walnuts to the bowl and toss to coat with the dressing.
