1 1/2 cups sugar
3/4 cup corn syrup
2 cups chopped walnuts
1/4 cup butter
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Mix sugar and corn syrup in a microwave-safe dish.
  • Microwave mixture for three (3) minutes.
  • Stir again and place in the microwave for an additional four (4) minutes.
  • Stir in walnuts, salt, vanilla and butter.
  • Mix with Electric Mixer until mixture is well blended and Fluffy.
  • Grease a cookie sheet with butter.
  • Spread mixture on cookie sheet in any desired thickness.
  • After candy cools SLIGHTLY stretch the brittle to your desired thickness.
  • Cool at least one hour.
  • When cooled break into pieces and store in covered (tight) container.

1 cup sugar
1/2 cup light corn syrup
1 cup coarsely chopped walnuts
1/2 teaspoon cinnamon
1 teaspoon margarine or butter
1 teaspoon vanilla
1 teaspoon baking soda

Steps:

  • MICROWAVE DIRECTIONS: Butter cookie sheet. In 8-cup microwave-safe measuring cup or medium microwave-safe bowl, combine sugar and corn syrup; mix well. Microwave on HIGH for 4 minutes.
  • Stir; microwave on HIGH for 3 to 5 minutes or until light brown.
  • Stir in walnuts, cinnamon, margarine and vanilla until well blended. Microwave on HIGH for 1 minute.
  • Add baking soda; stir until light and foamy. Pour onto buttered cookie sheet. Cool 30 minutes or until hardened.
  • Break brittle into pieces. Store in tightly covered container.

  • Preheat the oven to 375° with a rack in the center position. Roast the nuts on a rimmed baking sheet until fragrant, about 10 minutes, then transfer to large bowl. Line the baking sheet with a silicone baking mat or parchment paper and lightly coat with nonstick cooking spray.  In a small saucepan, melt the butter over medium heat, stirring occasionally. Continue cooking, stirring frequently, until the milk solids turn golden brown, about 4 minutes. Transfer to a heatproof bowl.  In a large saucepan, stir together the sugar, corn syrup, and 1/2 cup water. Bring to a boil over high heat, stirring until the sugar dissolves. Stop stirring when the mixture begins to boil. Cook until the mixture is deep amber and just beginning to smoke, about 20 minutes, brushing away any crystals that form on the sides of the pan with a wet pastry brush.  Off heat, stir in the brown butter, salt, and baking soda with a heatproof silicone spatula. Add the pecans and walnuts stir until the foam begins to subside. Be careful, the mixture will be extremely hot. Pour the candy mixture onto the prepared baking sheet and spread with the silicone spatula to about 9-by-12 inches. Sprinkle with sea salt. Set aside to cool completely, then break into pieces. Store in an airtight container at room temperature.
