Wagon wheels, or rotelle, are Chicago pastry chef Gale Gand's son Gio's first choice for this dish because he thinks they're fun. Any other pasta shape, such as penne or fusilli, can be used instead.Plus: Pasta Recipes and Tips

Yield 4 SIDE DISH SERVINGS

Number Of Ingredients 7

Salt
2 cups small broccoli florets
½ pound wagon-wheel pasta
½ cup chicken stock or low-sodium broth
2 tablespoons unsalted butter
¼ cup freshly grated Parmesan cheese (plus more for serving)
Freshly ground pepper

Steps:

  • Bring a large saucepan of water to a boil. Add salt. Add the broccoli florets and cook until crisp-tender, about 5 minutes. Transfer the broccoli to a bowl with a slotted spoon.
  • Bring the water back to a boil. Add the wagon wheels to the saucepan and cook, stirring occasionally, until al dente. Drain well in a colander.
  • Return the pasta to the saucepan. Add the chicken stock and butter and cook over moderately high heat, stirring gently, until some of the stock is absorbed. Stir in the broccoli and the 1/4 cup of Parmesan; season with salt and pepper and toss. Serve immediately, with additional Parmesan.

1 pound rotelle pasta (wagon wheel)
3 cups milk
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
Freshly ground black pepper
Pinch of cayenne pepper
1/2 teaspoon Dijon or yellow mustard
2 1/2 cups grated sharp cheddar cheese (about 10 ounces), plus 4 tablespoons for topping

Steps:

  • Bring a large pot of water to a boil; add salt. Add pasta; cook until al dente. Drain well. Transfer to a large bowl.
  • Heat milk in a medium saucepan over medium heat until hot. Melt butter in a deep skillet over medium heat.When butter begins to foam, add flour; cook, whisking, 1 minute. Gradually whisk in hot milk. Cook, whisking constantly, until mixture starts to bubble and thicken, about 5 minutes.
  • Remove skillet from heat. Add 1 teaspoon salt, a pinch of black pepper, cayenne, mustard, and cheese; stir until melted.
  • Stir cheese sauce into the pasta, and serve immediately.
