Loaded Waffle Fries Recipe: How to Make It image

Make any dinner fun with my Loaded Waffle Fries, topped with a savory blend of cheese, scallions and bacon. I copied this family-favorite recipe from a local restaurant, and it's great with hot dogs, burgers or by itself. —Jeffrey Viccone, Decatur, Illinois

4 cups frozen waffle-cut fries
1/2 to 1-1/2 teaspoons steak seasoning
1 cup shredded cheddar cheese
2 tablespoons chopped green onions
2 tablespoons real bacon bits

Steps:

  • Arrange waffle fries in a greased 15x10x1-in. baking pan. Bake at 450° for 20-25 minutes or until lightly browned. , Sprinkle with steak seasoning; toss to combine. Top with remaining ingredients. Bake 2-3 minutes longer or until cheese is melted.

Rachael shares her quick and tasty meatless twist on the classic Philly cheesesteak sandwich, with a side of garlic bread-flavored waffle fries.

Number Of Ingredients 30

5 tablespoons EVOO
12 large portabella mushrooms
stemmed
wiped clean with damp towel and thinly sliced
Salt and pepper
2 tablespooons Worcestershire or vegan Worcestershire
Splash of sherry
optional
2 bell peppers or 3 Cubanelle peppers
thinly sliced
1 large or 2 medium onions
thinly sliced
4 cloves garlic
crushed or thinly sliced 
4 soft fresh sub rolls
8 slices of mozzarella
8 slices of Swiss
Hot cherry peppers
optional
1 bag frozen waffle fries
4 tablespoons butter
4 cloves garlic
grated or finely chopped
4 tablespoons finely
freshly grated Parmigiano-Reggiano cheese
2 teaspoons fine salt
1 teaspoon granulated onion 
1 teaspoon white pepper
1 teaspoon red pepper
2 tablespoons dried parsley and 3 tablespoons finely chopped fresh parsley

Steps:

  • Preheat oven to 450°F for fries
  • Listicle: Rachael Ray 12-Inch Cast Iron Frying Pan For the subs, heat a large nonstick skillet over medium-high heat with 3 tablespoons EVOO, 3 turns of the pan, and cook mushrooms until well browned and fragrant
  • Season with salt and pepper, add Worcestershire and a splash of sherry (if using), then transfer to a platter and reserve the pan
  • While mushrooms cook, put waffle fries in oven
  • Add remaining EVOO to the pan you cook the mushrooms in, 2 turns of the pan, then add the peppers and onions, season with salt and pepper and soften 5 minutes
  • Add garlic and cook a few minutes more
  • Add mushrooms back to pan
  • For the fries, in a small pot, melt butter with chopped garlic over low heat
  • Once the fries are very crisp, place them in large bowl, add garlic butter, cheese, salt, granulated onion, white and red pepper and parsley and toss
  • Turn oven off
  • Fill rolls with mushrooms, peppers and onions and cheeses, place in warm oven for a minute or 2 to melt cheeses and serve with hot peppers (if using) and waffle fries on side
