My sons used to help me make these cookies, and now my oldest granddaughter helps. When the smaller grandchildren are home, they help, too. The cute little sandwich cookies are tender, buttery and melt-in-your-mouth good! —Linda Clinkenbeard, Vincennes, Indiana

1/2 cup butter, softened
1 cup all-purpose flour
3 tablespoons heavy whipping cream
Sugar
FILLING:
1/4 cup butter, softened
3/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1-1/2 to 2 teaspoons heavy whipping cream
1 drop each red and green food coloring

Steps:

  • In a small bowl, beat butter, flour and cream. Cover and refrigerate 1 hour or until easy to handle. , Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 1-1/4-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3-4 times with a fork. , Bake 7-9 minutes or until set. Remove to wire racks to cool., In a small bowl, combine butter, confectioners' sugar, vanilla and enough cream to achieve desired consistency. Remove half to another bowl; tint one portion of filling with red food coloring and the other half with green. Carefully spread filling on bottom of half of the cookies; top with remaining cookies.

Cookies
2 cups all-purpose flour
1 cup Land O Lakes® Butter softened
1/3 cup Land O Lakes® Heavy Whipping Cream
Sugar
Filling
3/4 cup powdered sugar
1/4 cup Land O Lakes® Butter softened
1 teaspoon vanilla extract
1 teaspoon freshly grated lemon or orange zest, if desired
1 to 3 teaspoons Land O Lakes® Heavy Whipping Cream
Food color, if desired

Steps:

  • Combine flour, butter, and whipping cream in medium bowl. Beat at low speed, scraping bowl often, until well mixed.
  • Divide dough into thirds. Wrap each third in plastic food wrap; flatten slightly. Refrigerate 2 hours or until firm.
  • Heat oven to 375° F.
  • Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8-inch thickness. Cut with 1 1/2-inch round cookie cutter. Dip both sides of each cookie in sugar. If sugar isn't sticking to cookie, sprinkle on top after placing on cookie sheet. Place, 1 inch apart, onto ungreased cookie sheets; prick all over with fork.
  • Bake 6-9 minutes or until slightly puffy but not browned. Cool slightly; carefully remove from cookie sheets. Cool completely.
  • Combine all filling ingredients except whipping cream and food color in bowl. Beat at medium speed, gradually adding enough whipping cream for desired spreading consistency. Tint filling with food color, if desired. Gently spread 1/2 teaspoon filling onto bottom side of one cookie; top with another cookie, bottom-side down. Store covered.
