- In large saucepan, combine all ingredients except noodles. Bring to a boil.
- Add noodles; return to a boil. Reduce heat; cover and simmer 8 to 10 minutes or until vegetables and noodles are tender, stirring occasionally.

Steps:
- Cook noodles according to package directions, drain and set aside.
- While noodles are cooking, heat oil in large saucepan over medium heat.
- Saute onion, stirring until pale golden, about 5 minutes.
- Add garlic, carrots and celery and saute until tender, stirring occasionally, about 5 minutes.
- Add tomatoes and reserved juice, broth, water, oregano, basil, bay leaf, and salt and pepper to taste.
- Bring to a boil, then reduce heat and simmer, partially covered, about 30 minutes.
- Stir in the beans and cooked noodles.
- Remove bay leaf.
- Sprinkle some of the parmesan cheese and chopped parsley on each serving of soup, or stir into saucepan prior to serving.

- To Cook In a pot over a medium heat, combine all of the broth ingredients and bring to a boil before reducing to a simmer and cooking for 20 mins. While the broth simmers, cook the noodles as per the packet instructions and set aside. Similarly, prepare the vegetable dumplings as per the packet instructions. In another pot of water, bring to a boil and blanche the bok choy for about 30 seconds. Remove from the pot and set aside. To Serve In a bowl, add a portion of the noodles and ladle over some of the broth. Top with the dumplings and the bok choy and garnish with sesame seeds. Enjoy!
