This is an important dish to serve for Chinese New Year. Many parents encourage their children to eat more of it so they won't fight as much, and thus start the new year in harmony.

Yield 8 servings (serving size: 1/2 cup)

Number Of Ingredients 14

Cooking spray
2 teaspoons minced peeled fresh ginger
2 garlic cloves, minced
1 cup diced oyster mushroom caps (about 3 ounces)
1 (8-ounce) package Thai-style flavored baked tofu, julienned
½ cup (3-inch) julienne-cut carrot
½ cup frozen whole-kernel corn
½ cup canned whole water chestnuts
1 tablespoon low-sodium soy sauce
1?½ teaspoons rice vinegar
? cup (3-inch) julienne-cut green onions
1 teaspoon dark sesame oil
¼ teaspoon black pepper
? teaspoon salt

Steps:

  • Heat a large skillet or wok coated with cooking spray over medium-high heat. Add ginger and garlic cloves; stir-fry 30 seconds. Add mushrooms and tofu; stir-fry 2 minutes. Add carrot, corn, and water chestnuts; stir-fry 1 minute. Stir in soy sauce and vinegar; cook 2 minutes. Stir in green onions, sesame oil, pepper, and salt.

Popular Chinese style vegetable stew also named as Buddha's Delight

Number Of Ingredients 15

1/2 head broccoli (cut into small sections)
1/2 bunch of bean thread noodles (pre-soaked with cold water (optional))
4 fresh Shiitake mushrooms (cut into small cubes)
1/2 cup beech mushrooms 
1/2 cup white beech mushrooms
5 fried tofu (cut into halves )
Wood ear mushrooms (pre-soaked and well washed)
Snow peas (cut into halves)
2 tbsp. vegetable cooking oil
2 garlic cloves (sliced)
2 tbsp. light soy sauce
1 tsp. sugar 
1 tsp. cornstarch + 2 tbsp. water 
1 cup water
1 tbsp. sesame oil

Steps:

  • In a large pot, bring enough water to a boiling and then blanch the broccoli for 20 seconds. Transfer out.
  • Heat oil in wok and fry garlic until aromatic. Place wood ear mushrooms, and all fresh mushrooms. Fry for 1 minutes until almost soft.
  • Place in fried tofu and soaked bean thread noodles. Pour in 1 cup of water, then add around 2 tablespoons of light soy sauce. Simmer for half minutes. Place blanched broccoli and snow peas.
  • Stir the starch water and continue cooking until the sauce is slightly thickened.
  • At last, add 1 tablespoon of sesame oil. Mix well and serve hot.
