This is the quickest way to make fried rice without any extra ingredients. To kick it up a notch, add a squeeze of Sriracha to taste. It’s an excellent vegetarian main dish, but you can easily serve it with chicken or shrimp for an added boost of protein. This budget friendly meal costs just $1.67 per serving on average.

1/4 cup vegetable oil
3 eggs, slightly beaten
1 bag (14.4 oz) frozen broccoli stir-fry vegetables
2 cloves garlic, finely chopped
4 cups cooked white rice
1/3 cup soy sauce

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add eggs; cook and stir until eggs are set. Remove to plate; keep warm.
  • In same skillet, heat remaining 3 tablespoons oil over medium-high heat. Add frozen stir-fry vegetables and garlic; cook 4 to 6 minutes, stirring occasionally, until vegetables are heated. Stir in eggs, rice and soy sauce; cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
