Number Of Ingredients 8

2 orange roughy fillets (6 ounces each)
2 tablespoons minced chives
2 teaspoons minced fresh thyme
1 medium lime, thinly sliced
3 cups frozen Italian vegetables, thawed
2 teaspoons butter, melted
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place fish fillets in an 8-in. square microwave-safe dish. Sprinkle with chives and thyme. Top with lime and vegetables. Drizzle with butter; sprinkle with salt and pepper. , Cover and microwave on high for 5-7 minutes or until fish flakes easily with a fork and vegetables are heated through.

A quick and easy recipe that tastes fantastic! I used cod but you can really use anything you want.

Number Of Ingredients 12

2 zucchini, sliced
1 large potato, sliced
1 bunch green onions, chopped
2 large carrots, sliced
4 (4 ounce) fillets cod
1 tablespoon dried dill weed
2 roma (plum) tomatoes, sliced
1 fresh red chile pepper, seeded and chopped
1 tablespoon olive oil
1 tablespoon fresh lemon juice
sea salt to taste
coarsely ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x12 inch baking dish.
  • In the baking dish, arrange the zucchini, potato, green onions, and carrots. Place the cod on top of the vegetables, and sprinkle with dill. Arrange tomato slices over the cod, and sprinkle with red chile pepper. Drizzle with olive oil and lemon juice, and season with sea salt and pepper.
  • Cover dish with aluminum foil, and bake 30 minutes in the preheated oven, until vegetables are tender and fish is easily flaked with a fork.
