Make this vegan chocolate yule log ahead of time for a stress-free festive dessert – a great alternative to Christmas pudding

50g dairy-free margarine, melted, plus extra for the tin
250ml soya milk
2 tsp cider vinegar
250g self-raising flour
50g caster sugar, plus 2 tbsp
1 tsp baking powder
1 tbsp cocoa powder
90g dairy-free margarine
200g icing sugar
1 tsp vanilla extract
200g dark chocolate
1½ tbsp brown sugar
130g silken tofu
mixed berries, holly or icing sugar, to decorate (optional)

Steps:

  • First, make the ganache. Melt the chocolate and sugar together in a heatproof bowl set over a pan of gently simmering water, ensuring the bottom of the bowl doesn’t touch the water. Leave to cool slightly. Beat the tofu in a medium bowl with an electric whisk until smooth. Add the melted chocolate mixture and beat for 1-2 mins more until thickened and smooth. Set aside in a cool place.
  • Heat the oven to 180C/160C fan/gas 4. Butter and line a 33 x 23cm Swiss roll tin with baking parchment. Mix the milk and vinegar together in a jug, then set aside to thicken slightly. Whisk the flour, 50g sugar, baking powder and cocoa powder together until combined. Whisk the melted margarine into the milk mixture and gradually pour this into the dry ingredients, whisking continuously until smooth. Pour into the tin, smooth the surface and bake for 20 mins. Leave to cool in the tin for 5 mins.
  • Sprinkle the 2 tbsp sugar over a large sheet of baking parchment. Turn the warm sponge out onto the sugared parchment, then peel off the parchment used to line the tin. Roll up the sponge from one of the short ends, using the sugared parchment to help you. While rolled up, cover with a tea towel and leave to cool completely (rolling the sponge while warm helps prevent large cracks). Don’t worry if there are small cracks – they’ll be hidden by the ganache.
  • Make the icing by whisking the margarine, icing sugar and vanilla together until pale and fluffy. Unroll the cooled sponge carefully, then spread the icing over using a palette knife, keeping a roughly 5cm border on the short end of the roll. Roll the sponge up again.
  • Stir the ganache to loosen it, then spread over the yule log with a palette knife. Drag a fork down the length of the log several times to create a bark-like pattern. Chill for 30 mins. Will keep in the fridge for up to three days. Decorate with berries and holly, or dust with icing sugar, if you like.

SCRUMPTIOUS YULE LOG | JAMIE OLIVER RECIPES

    1. Preheat the oven to 180°C/350°F/gas 4, and line a 25cm x 35cm baking tray with greaseproof paper.
    2. To make the sponge, first separate the eggs. Then, using an electric mixer, whisk the egg whites to stiff peaks with a pinch of sea salt. Gradually whisk in the icing sugar, then, one-by-one, whisk in the egg yolks until really pale and light. Sift in the flour and cocoa powder, add the vanilla bean paste, then fold everything together with a large metal spoon, so you keep in as much air as possible.
    3. Spoon the batter into the lined tray, then gently and evenly spread it out. Scatter the hazelnuts on a separate tray and bake both for 8 to 10 minutes, or until the sponge is just cooked through and springy to the touch.
    4. While it’s still hot and soft, turn out the sponge onto a large sheet of greaseproof paper (35cm x 45cm) on a flat surface. Peel off and discard the baked piece of greaseproof. With one of the longest sides in front of you, fold over the excess paper, then roll up the sponge with the paper inside (as it cools, this will set the shape but prevent the sponge from cracking). Leave to cool.
    5. Meanwhile, melt the chocolate and butter for the hazelnut spread with a big pinch of sea salt in a heatproof bowl set over a pan of simmering water.
    6. Once cool, blitz most of the toasted hazelnuts to a completely smooth paste, then mix into the melted chocolate and butter. Put one half of the mixture into a jar for another day (see tip), pour the remainder into a tin or bowl, then pop both into the fridge for 2 hours to set.
    7. For the filling, whisk the cream and icing sugar to soft peaks. To assemble, unroll the sponge so it’s flat, removing the paper. Spread the hazelnut chocolate spread all over and up to the edges, then repeat with the cream. Along one long edge, dot on the cherries and drizzle over a tablespoon of the juices from the jar, then grate on the clementine zest. Re-roll the sponge and pop into the fridge.
    8. Meanwhile, make your buttercream. Melt the chocolate in a heatproof bowl over a pan of gently simmering water, then remove and leave to cool. Beat the butter in an electric mixer until pale, then, with the mixer still running, gradually add the icing sugar and cooled melted chocolate.
    9. Take the log out of the fridge, chop off a quarter at an angle – that’s the branch – and position it on your serving board like in the picture, using a splodge of buttercream to keep it in place. Evenly cover the whole log with buttercream, then use a fork to decorate it. Blitz up the reserved hazelnuts and dust them on top, along with some desiccated coconut, then decorate with plastic Bambi figures, whatever you like – go to town!

    1. Preheat the oven to 180ºC/gas 4. Line a 26cm x 37cm swiss roll tin with baking paper, making sure it is higher than sides.
    2. Blitz the walnuts in a food processor until finely ground, then add the baking powder and a pinch of sea salt.
    3. Separate the eggs. Use an electric beater to whisk the egg whites to firm peaks. Gradually beat in half the sugar, till glossy.
    4. In another bowl, whisk the egg yolks with the remaining sugar until pale and thick. Gently fold in the walnut mixture, flour and cocoa. Using a large metal spoon, fold the egg white mixture into the nut mixture, a little at a time. Spoon into the tin and bake for 25 minutes, until an inserted skewer comes out clean and the sponge is springy.
    5. While still warm, lay a sheet of baking paper over the sponge and flip it out of the tin. Peel off the tin lining and leave to cool for 5 to 10 minutes. Drizzle the cake with the marsala and roll from the longest edge, the paper inside. Cover with a damp cloth. Melt the chocolate in a bowl set over a pan of simmering water. Put the icing sugar in a food processor with the butter and blitz to cream. Add the slightly cooled chocolate and pulse till smooth. Place in a bowl and chill in the fridge for 30 minutes. Whisk the cream until just starting to peak and then gently stir in the chestnut purée. When the sponge is cool, unroll and spread with the cream, leave a 2cm border around the edge. Re-roll the cake, without the paper but using it as a guide.
    6. Spread the chocolate icing on top. Make wood-effect with a fork, then dust with icing sugar.
