- Preparation 1 Place onions on bottom of crock pot. Mix together the garlic, thyme and rosemary. Rub on all sides of the roast and place over onions in crock pot. Pour chicken stock around the sides of the meat. Season with salt and pepper.2 Cover and cook on high for 4-5 hours. That''s it! Just note that when you take the veal out of the crock pot, you should let it sit for a few minutes before slicing so the juices can redistribute in the meat. 3 As seen in the picture, I served the veal with rustic mashed potatoes and roasted brussels sprouts, sprinkled with Montreal Chicken seasoning and Old Bay seasoning. Special instructions I don't really cook with veal often, even though it is a low-fat meat and I should probably be cooking with it much more. So when I saw the beautiful rolled veal neck roast at the Kosher grocery store, I had to pick it up! I did some research on crock pot veal roast recipes and came up with my own recipe. It came out perfect! Most of the recipes called for browning the meat first, but I was being lazy and didn't want to wash any extra dishes, and it turns out the browning wasn't even necessary. - Heat the oven to 180C / 356F.
- Tie the Veal Meat and place it into a large frying pan.
- Pour the Oil all over the Veal Meal and place Rosemary Sprigs and Sage Leaves beneath the cord.
- Sprinkle with Salt and Black Pepper. Flip the meat and sprinkle Salt and Pepper underneath too.
- Saute' the Veal over medium fire.
- In the meantime, peel the Potatoes and cut them into chunks...

- In a small bowl, beat egg yolks. Stir in a small amount of hot gravy. Slowly pour egg yolk mixture back into gravy, whisking until thickened. DO NOT BOIL! To serve, pour some gravy over the veal and vegetables. Serve remaining gravy in a gravy boat.
