MINI VANILLA SCONES WITH VANILLA BEAN GLAZE RECIPE | REE ...

Mini Vanilla Scones with Vanilla Bean Glaze Recipe | Ree ... image

Provided by Ree Drummond : Food Network

Categories     side-dish

Total Time 2 hours 10 minutes

Prep Time 20 minutes

Cook Time 20 minutes

Yield 24 mini scones

Number Of Ingredients 12

2 whole vanilla beans
3/4 cups heavy cream
3 cups all-purpose flour, plus more for dusting
2/3 cups granulated sugar
5 teaspoons baking powder
1/4 teaspoon salt
2 sticks (1/2 pound) unsalted butter, chilled
1 whole large egg
1 whole vanilla bean
1/2 cup whole milk, plus more if needed
5 cups powdered sugar, sifted, plus more if needed
Dash of salt

Steps:

  • For the scones: Preheat the oven to 350 degrees F. Split the vanilla beans in half lengthwise and scrape out all the vanilla "caviar" inside. Stir the caviar into the cream. Set aside for 15 minutes.
  • Sift together the flour, granulated sugar, baking powder and salt. Cut the cold butter into pats, and then use a pastry cutter or two knives to cut the butter into the flour. Keep going until the mixture resembles crumbs.
  • Mix the vanilla cream with the egg, and then combine with the flour mixture. Stir gently with a fork just until it comes together.
  • Turn the dough onto a floured surface and lightly press it together until it forms a rough rectangle. (Mixture will be pretty crumbly.) Use a rolling pin to roll into a rectangle about 12-by-7 inches and 1/2-to-3/4-inches thick. Use your hands to help with the forming if necessary. Then cut the rectangle into 12 symmetrical squares/rectangles. Next, cut each square/rectangle in half diagonally, to form two triangles. Transfer to a parchment or baking-mat-lined cookie sheet and bake for 18 minutes, removing from the oven just before they start to turn golden. Allow to cool for 15 minutes on the cookie sheet, and then transfer to a cooling rack to cool completely.
  • For the glaze: Split the vanilla bean in half lengthwise and scrape out the caviar. Stir the caviar into the milk. Set aside for 15 minutes.
  • Mix the powdered sugar and salt with the vanilla milk, adding more powdered sugar or milk if necessary to get the right consistency. Stir or whisk until completely smooth.
  • One at a time, carefully dunk each cooled scone in the glaze, turning it over if necessary. Transfer to parchment paper or the cooling rack. Allow the glaze to set completely, about an hour. Scones will keep several days if glazed.

These blueberry scones are the perfect brunch (or anytime) treat! Just don't forget to slather on the icing.

Total Time 1 hours 10 minutes

Prep Time 50 minutes

Cook Time 0S

Yield 6 servings

Number Of Ingredients 16

10 tbsp.

frozen unsalted butter

1 1/2 c.

cake flour

1 c.

all-purpose flour, plus more

for dusting

1/3 c.

granulated sugar

1 tbsp.

baking powder

1 tsp.

salt

1/4 tsp.

baking soda

1/2 c.

heavy cream, plus more

for brushing

1/2 c.

crème fraîche

1 1/4 c.

frozen blueberries (about 5 ounces)

2 c.

powdered sugar

3 tbsp.

milk

1 tsp.

vanilla bean paste

1 tbsp.

unsalted butter, melted

Pinch of salt

2 tbsp.

pearl sugar

Steps:

  • For the scones: Preheat the oven to 425˚. Line a baking sheet with parchment paper. Grate the frozen butter on the large holes of a box grater into a bowl. Return to the freezer until ready to use. Whisk the cake flour, all-purpose flour, granulated sugar, baking powder, salt and baking soda in the bowl of a stand mixer. Combine the heavy cream and crème fraîche in a small bowl and chill. Add the frozen butter to the flour mixture. Using the paddle attachment, mix on medium-low speed until the butter is worked in, about 1 minute. Add the cream mixture and mix briefly, just until large clumps form, about 30 seconds. (The dough should hold together when you squeeze it.) Turn out the dough onto a floured piece of parchment paper. Pat and press into a rough square, then use a rolling pin to roll it into a 12-inch square. Using the parchment to help you, fold down the top one-third of the square, then fold the bottom third up over it, like a letter. Flip over the dough, re-flouring the parchment, and roll out again into a 12-inch square.  Scatter the blueberries on top of the dough, pressing them in. Roll up the dough into a log, like a jelly roll, using the parchment to help you (it’s OK if the berries poke through). Turn the log seam-side down and flatten so it is about 4 inches wide and 1 inch thick. Using a sharp knife, cut the log into three 4-inch squares, then cut each square diagonally in half. Transfer the scones to the baking sheet and brush with heavy cream. Bake, rotating the pan once, until the scones are golden brown, about 20 minutes. Let cool completely on the baking sheet. For the icing: Whisk the powdered sugar, 2 tablespoons plus 2 teaspoons milk, the vanilla bean paste, melted butter and salt until smooth. Stir in 1 more teaspoon milk if the icing is too thick. Spread on the scones and sprinkle with the pearl sugar.

TOP SECRET RECIPES | MCDONALD'S VANILLA ICED COFFEE
In the coffee war that's been brewing since 2007, McDonald's is emerging victorious by snagging a significant chunk of the $11 billion coffee market away from sector-leader Starbucks. The hamburger chain's McCafe offerings, which include premium cappuccinos, lattes, and iced coffees, scored higher in taste tests according to Consumer Reports magazine, and the drinks come with a lower price tag than comparable beverages at the coffeehouse chain. The Vanilla Iced Coffee appears to be a standout selection at The Golden Arches, and a home clone is simple after you get your hands on some Torani vanilla syrup. Brew up some coffee, chill it, then pour these three ingredients over ice in a 16-ounce glass. The taste of your finished drink will be determined by the quality of your coffee (McDonald's has its own beans), so be sure to brew your best stuff. The better the coffee you start with, the better your clone will taste. Some petite vanilla scones would be pretty tasty right about now. Check out all my Starbucks clone recipes here.
