2 tablespoons sugar
1-1/2 teaspoons cornstarch
1 tablespoon butter, melted
1/2 cup 2% milk
1/2 teaspoon vanilla extract
2/3 cup sweetened condensed milk
1 cup heavy whipping cream
1 ounce semisweet chocolate, melted
18 chocolate chip or sugar cookies (3 inches)
Miniature semisweet chocolate chips, chocolate jimmies, chopped unsalted peanuts or sweetened shredded coconut, optional

Steps:

  • In a small saucepan, combine sugar, cornstarch and butter; stir in milk. Bring to a boil over medium heat; cook and stir 2 minutes or until thickened. Remove from heat; stir in vanilla. Cool completely. Stir in condensed milk. , In a large bowl, beat cream until stiff peaks form; fold into milk mixture. Divide between two freezer containers. Stir melted chocolate into one container until well blended. Cover and freeze both mixtures for 6 hours or until firm., To make ice cream sandwiches, spread a 1/3 of a cup of ice cream on bottoms of half of the cookies. Cover with remaining cookies; press down gently. If desired, roll sides of ice cream sandwiches in chocolate chips, jimmies, peanuts or coconut. Wrap each in plastic wrap; freeze on a baking sheet until serving.

These ice cream sandwiches are so easy and so satisfying! Nilla wafer cookies stuffed with vanilla ice cream. It doesn't get much better!

Number Of Ingredients 6

2 cups whole milk
1 cup sugar
1 cup heavy cream
2 teaspoon pure vanilla extract
2 cups Nilla Wafers
Nilla Wafers

Steps:

  • Place the milk and sugar in a food blender and blend for about 2 minutes, or until the sugar is dissolved. You can also use an electric mixer or a whisk.
  • In a separate bowl stir together the heavy cream and the pure vanilla extract.
  • Pour the heavy cream mixture into the milk/sugar mixture and blend for another minute.
  • Turn on the ice cream maker, pour in the milk mixture, and freeze it according to the manufacturer’s instructions.
  • In the meantime crush 2 cups Nilla Wafers. You can put them in a zip lock bag and just roll over them a few times with a rolling pin.
  • minutes before the ice cream is done, pour the crushed wafers into the mixture through the ingredient spout on the ice cream maker.
  • Once the ice cream is done, grab an ice cream scoop or a spoon, spread the ice cream on a Nilla wafer, then sandwich it together with another wafer.
  • Place in the freezer for an hour, or until firm.
  • Serve.
