Crepes With Vanilla Cream Sauce (Bob Evans) Recipe - Food.com image

If you like Bob Evan's version of crepes and the cream cheese sauce that they serve in them, this is the best recipe that comes close to it!

Total Time 20 minutes

Prep Time 15 minutes

Cook Time 5 minutes

Yield 6-8 serving(s)

Number Of Ingredients 14

1 3/4 cups milk
3 whole eggs
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
5 tablespoons melted butter
8 ounces cream cheese, room temperature (soft)
1/2 cup powdered sugar (or to taste)
4 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 cup sour cream
1/2 cup heavy cream (a little thinner than pudding, add until it is thin enough to just drip)
fresh fruit, of choice strawberries and bananas are good

Steps:

  • In a blender mix together the milk, eggs and vanilla.
  • Stir in the flour, sugar, salt and melted butter until well blended.
  • Heat a crepe pan or a good non stick 8 " pan over medium heat until hot.
  • Lightly coat with a tiny bit of olive oil.
  • Pour 1/4 cup of batter into the pan and tip pan to spread the batter evenly. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned, it will have a lacy look.
  • Place crepes on parchment papaer or wax paper to seperate each one.
  • Fill crepes with the Vanilla Cream Sauce. Directions below --.
  • VANILLA CREAM SAUCE DIRECTIONS.
  • Mix all ingredients for Vanilla Cream Sauce together.
  • Spoon into center of crepe and fold over seam side down.
  • Top with fresh fruit of choice. I like to also drizzle a lil bit of the vanilla cream sauce on top to keep blueberries from rolling off the crepes!

VANILLA CREAM OR SAUCE RECIPE | ALLRECIPES

Vanilla Cream or Sauce Recipe | Allrecipes image

This is really delicious on its own, but I use it mainly to serve alongside brownies, bread pudding, apple pie, berries, or poached pears. You can either make this as a thicker cream or as a sauce. I love it as a cream for berries, poached pears or brownies and as a sauce over apple pie or bread pudding. Serve chilled over warm or cool desserts or just eat it on its own as a custard.

Total Time 1 hours 10 minutes

Prep Time 10 minutes

Cook Time 10 minutes

Yield 6 servings

Number Of Ingredients 5

2?½ cups whole milk, divided
1 tablespoon cornstarch, or more as desired
? cup white sugar
2 egg yolks
1 teaspoon vanilla extract

Steps:

  • Heat 2 cups milk in a heavy saucepan over low heat until simmering, about 5 minutes.
  • Beat remaining 1/2 cup milk and cornstarch together in a bowl using a whisk until dissolved; add sugar and egg yolks and beat until smooth. Slowly pour milk mixture into simmering milk while gently whisking the simmering milk; simmer, stirring frequently, until thickened, about 3 minutes. Remove saucepan from heat and stir vanilla extract into sauce.
  • Pour the sauce through a wire mesh sieve into a bowl to remove any cornstarch lumps. Place a piece of plastic wrap on top of the sauce, ensuring the plastic wrap is touching the sauce to prevent a skin from forming; cool to room temperature, about 20 minutes.
  • Move sauce to refrigerator and chill completely cold, at least 30 minutes.

VANILLA CREPES RECIPE | ALLRECIPES
When I was a little girl, my mother would always make us crepes on Sundays. I also loved the smell of vanilla when my mother would make her cookies. So, I would always ask her to make her cookies, and when she refused, I would take out the vanilla and sit it next to me with the cap open, so that I could breathe the aroma. My mother get a kick out of this, and said, well, if it's that important, we'll add a little vanilla kick, just for you. After the first time she put the vanilla in, there was never a last...it became a tradition.

FRENCH CREAM CREPES WITH RASPBERRY SAUCE RECIPE - FOOD.COM
I first made this for Girl Scout Thinking Day in 92 or 93. I made over 300 of them! Somewhere along the line I lost the cookbook, but then a friend of mine had the exact same cookbook and let me have it! I'm posting it here so I don't loose it again. I made them again for a NYE party to ring in 2011, they're just as great as I remember them! The parts can be made the day before and assembled right before needed.

  • Prepare chocolate crepes: In a medium bowl, combine flour, cocoa powder, confectioners' sugar, and salt. In another bowl, use a wire whisk to beat eggs, milk, oil, and vanilla until smooth. Let mixture stand 5 minutes to thicken. Prepare vanilla crepes (optional): In a medium bowl, combine flour, confectioners' sugar, and salt. In another bowl, use a wire whisk to beat eggs, milk, oil, and vanilla until smooth. Let mixture stand 5 minutes to thicken. Heat a nonstick crepe pan or a heavy 8-inch skillet over medium heat; spray with vegetable-oil cooking spray. Ladle a scant 1/4 cup batter into skillet; tilt pan, covering bottom with batter and creating a 6-inch circle. Cook crepe until top has set and is lighter in color -- about 2 minutes. Carefully turn and cook other side briefly. Transfer crepe to a sheet of waxed paper. Repeat with remaining batter, stacking crepes between sheets of waxed paper. Set aside until ready to serve or freeze. Prepare raspberry sauce: In the bowl of a food processor fitted with chopping blade, puree raspberries, granulated sugar, and brandy, if desired, until smooth. Transfer mixture to a fine strainer set over the bowl of an airtight container. Using the back of a spoon, press puree through strainer; discard pulp and seeds. Cover and refrigerate until ready to use. Prepare banana-cream filling: Place heavy cream, cream cheese, and confectioners' sugar in a medium bowl. Using an electric mixer on high speed, beat until stiff peaks form. In another medium bowl, mix together bananas and cinnamon. Fold 1 cup whipped cream into banana mixture, then fold banana mixture into remaining whipped cream until well combined. If crepes have been frozen, bring to room temperature. When ready to serve, warm crepes in microwave and place 1/3 cup filling into center of each crepe. Fold both sides of crepe toward the center, covering filling. Place on plate and drizzle with raspberry sauce.
