3 cups confectioners' sugar
1 cup butter
1 teaspoon vanilla extract
1 to 2 tablespoons whipping cream

Steps:

  • In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
  • Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.

Meanwhile, to make the vanilla buttercream, beat butter in the bowl of a stand mixer fitted with paddle attachment until pale and fluffy. Add icing sugar and vanilla, then beat until combined. Use half of the icing to sandwich cakes together. Use back of spoon or spatula to cover top and side of cake with remaining icing.

This icing recipe is my absolute favorite out of all that I've tried! I used it to pipe on decorations for my daughter's horse birthday cake. I needed to add almost 2/3 cup more powdered sugar to make it stiff enough to pipe on. To decorate a 9x13" cake, you will want to double the recipe.
