Thanks to plenty of vanilla beans, these vanilla cookie bars make the best dessert for any celebration. It is nut-free, decadently moist, and super tasty.

Bars
2¾ cups all-purpose flour
1¼ tsp baking powder
½ tsp salt
1 cup softened unsalted butter
¾ cup granulated sugar
? cup powdered sugar
1 small Seeds of vanilla bean
2 large eggs
1 tsp vanilla extract
frosting
½ cup butter
1 small Seeds of vanilla bean
½ tsp vanilla extract
2½ cups powdered sugar
3 tbsp half and half

Steps:

  • Preheat oven to 350 degrees F. Butter a 13x9-inch baking dish, set aside.
  • In a mixing bowl, whisk together flour, baking powder, and salt for 20 seconds, set aside.
  • In the bowl of an electric stand mixer. whip together butter, granulated sugar, powdered sugar, and vanilla bean seeds until pale and fluffy.
  • Stir in eggs one at a time then mix in vanilla. Slowly add flour mixture and mix just until combined.
  • Spray hands with non-stick cooking spray and gently press mixture into prepared baking dish.
  • Bake until bars are set and no longer doughy in the center, about 15 to 20 minutes. Cool completely, then frost and cut into squares.
  • Frosting:
  • In the bowl of an electric stand mixer fitted with the paddle attachment, whip butter with vanilla bean seeds until light and fluffy.
  • Mix in vanilla, powdered sugar, and 2 Tbsp half and a half and mix until light and fluffy.
  • If needed add more half and half, 1 teaspoon at a time to reach the desired consistency.

Vanilla Sugar
1 cup sugar
1/2 teaspoon vanilla
Cookie
1 cup sugar
3/4 cup Land O Lakes® Butter softened
2 vanilla beans
1 large Land O Lakes® Egg
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Water

Steps:

  • Combine 1 cup sugar and 1/2 teaspoon vanilla in bowl. Spread onto waxed paper-lined baking sheet; let stand 4 hours or until dry. Sift sugar mixture through strainer to remove lumps. Set aside.
  • Heat oven to 375°F.
  • Combine 1 cup sugar and 3/4 cup butter in bowl. Beat at medium speed, scraping bowl often, until creamy.
  • Split vanilla beans lengthwise with sharp knife. Scrape seeds from vanilla beans; add to butter mixture. Add egg; continue beating until well mixed. Add flour, baking powder and salt; beat at low speed until well mixed.
  • Shape dough into 1-inch balls. Dip top of each ball in water, then into vanilla sugar. Place 2 inches apart onto ungreased cookie sheets. Bake 8-14 minutes or until edges are very lightly browned.
