GRILLED CHEESE, DINER STYLE RECIPE - FOOD.COM

Grilled Cheese, Diner Style Recipe - Food.com image

The mayonnaise in place of the butter makes the bread toast evenly and gives a similar yet different crispiness. This is how they made it on the grill at a diner I used to frequent, the kind where the grill is behind the counter and you can watch. CAUTION: using low fat or no fat mayo or even miracle whip will change the outcome of the final product, the first 2 contain water and the second sugar that does not act in the same manor as an oil or fat sub.

Total Time 8 minutes

Prep Time 2 minutes

Cook Time 6 minutes

Yield 1 serving(s)

Number Of Ingredients 3

2 slices bread
1 slice American cheese
1 tablespoon mayonnaise

Steps:

  • Heat a small skillet to medium.
  • Using a butter knife, spread half of mayonnaise onto one slice of the bread, place mayo side down in the skillet.
  • Top with cheese.
  • Spread remaining mayonnaise onto second slice of bread and place mayonnaise side up on top of cheese.
  • Cook 3 minutes, or until bread is toasty brown, turn and repeat.
  • Note: Miracle Whip does not work for this, as the sugar in it tends to burn.

  • Place bread on a cutting board and spread mayonnaise over top side of each; this is key to a golden, delectable crunch. Heat a small skillet (nonstick, ideally) over medium. Slide in half of butter. When it melts, place 1 slice of bread, mayonnaise side down, in skillet; top with cheese; season with pepper. Top with second slice of bread, mayonnaise side up. When underside is golden brown, about 4 minutes, turn sandwich and add remaining butter to skillet. Press down on sandwich to encourage even browning and to help melt cheese—be gentle, don’t smash it. Cook until second side is golden brown and cheese is melted. Eat immediately, preferably with soup.

THE MAYO ADVANTAGE FOR GRILLED CHEESE - COOK'S ILLUSTRATED
Some cooks we know swear by spreading mayo on the bread for grilled cheese instead of butter. Since it saves the step of having to soften butter to make it spreadable, we decided to test this method ourselves. Both butter and mayonnaise produced sandwiches with crisp, well-browned exteriors. Unsurprisingly, the sandwiches made with butter tasted more buttery, while the mayonnaise versions had a slight but discernible tang.
