2 tablespoons unsalted butter
1 tablespoon minced garlic
1 teaspoon crushed red pepper
3 cups roasted marcona almonds
Kosher salt
Black pepper
1 tablespoon minced chives

Steps:

  • In a large skillet, melt the butter. Add the garlic and crushed red pepper and cook over moderate heat, stirring, until the garlic is softened, about 2 minutes. Add the almonds and cook, stirring occasionally, until coated and hot, about 2 minutes. Season with salt and pepper. Let cool completely; stir in the chives.

With the high price of Marcona almonds imported from Spain I was happy to find a recipe that produces a very close facsimile at a fraction of the cost, but uses California almonds. This was adapted from an article published in the San Francisco Chronicle. Hope you like them.

Prep Time 15 minutes

Cook Time 40 minutes

Yield 1 3/4 cups

Number Of Ingredients 3

1/2 lb california almonds
1 teaspoon extra virgin olive oil
coarse salt

Steps:

  • .Preheat oven to 300°F.
  • Boil almonds in water for about 30 seconds.
  • Drain the almonds in a sieve, then place them in a clean dish towel.
  • Rub them to remove the skins.
  • Place the almonds on a rimmed baking sheet.
  • Add olive oil and coat them evenly.
  • Sprinkle with salt.
  • Bake the almonds 30 to 40 minutes, stirring a couple of times so that they brown evenly.
  • When done, spread on a cool surface to let cool.
  • Add more salt if needed.
  • Store in an airtight container.
