This makes enough egg salad for a fast lunch for one. I loved a ton of the recipes for egg salad on Recipezaar but needed something that I had all of the ingredients on hand. It's a little unique but tasty.

Steps:
- Dice up eggs in bowl.
- Stir all other ingredients into eggs.
- Spread on bread or crackers.

VERY UNIQUE JELLO SALAD | JUST A PINCH RECIPES
The topping is very unique and different you will love it! I personally only like bananas and marshmellows in my jello however people like different fruits and all work fine =) Topping is different but makes this recipe good for a side dish or dessert. Another recipe I am always asked for when I take it anywhere and I love that it is different and always enjoyed by many =) This recipe was given to me by my Aunt many years ago and I have never seen it anywhere so I wanted to share. Try it its so easy and can be decorated so many ways. I use pineapple and pecans on top sometimes as well =)

Steps:
- Make jello as directed on box, add bananas and any other fruit you would like. 1/2 cup less on hot water
- Add mini marshmellow to cover the top of jello they will float on top. Put in Fridge until firm
- Mix topping in sauce pan on stove on medium heat flour,pineapple juice, butter, sugar and egg until thick and set aside to cool.(make sure you stir at all times to keep from getting lumpy. You can use an electric mixer after it is done cooking if needed)
- When topping is cool add cool whip and mix well. Spread over firm jello.
- Decorate with Blueberries and strawberries or any other fruit you like. You can also add food coloring to topping and decorate that way as well.
