- Sauce: Heat olive oil in a large saucepan.
- Saute onion and garlic in oil until onion is transparent.
- Add cut up tomatoes, tomato sauce, sugar, and basil.
- Simmer about 20 minutes.
- Filling: Mix ricotta, mozzarella, parmesan, parsley, sugar, and egg together.
- Assemble: Fill uncooked manicotti shells with cheese mixture.
- Place in a lightly greased 9 x 13-inch baking dish; cover completely with sauce.
- Cover and bake at 400°F for about 1 1/4 hours or until pasta is tender.
- Uncover and sprinkle with some Parmesan cheese and bake 15 minutes longer.
- Let sit about 15 minutes before serving.

Very easy to make. I started making this when I was 7 years old. Do not cook noodles prior to stuffing. Kids and adults both love this recipe.

- In medium bowl combine ricotta, mozzarella, provolone, parmesan, eggs, parsley, salt and pepper, and any optional ingredients.
- Stuff shells by repeatedly twisting uncooked noodles against the bottom of the bowl.
- Place stuffed manicotti in 9x13 inch pan. (Leave one shell empty from box in order to accommodate all manicotti into pan).
- In small bowl empty jar of Prego.
- Fill empty Prego jar with about 1 cup of water and shake to grab remaining sauce from jar and pour into bowl.
- Stir sauce then pour over manicotti noodles.
- Cover with foil and freeze.
- Heat oven to 375. Cook for 45 minutes covered and 45 minutes uncovered, or until the sauce is bubbling on the sides.

In a medium bowl, add peas & carrots, ricotta, 1/3 cup green onions, parmesan, egg and black pepper; stir gently to combine. Transfer mixture to a gallon-size zip top bag; set aside. If using shells, select 24 pasta shells that are wider open than others. Snip off one corner of the bag with filling and holding each shell, pipe in filling (about 2 Tbsp.) and place open-side-up in sauce. For manicotti, place one 1 finger at end of each tube while piping filling into other end. Cover dish tightly with foil and bake 50 minutes. Remove foil; sprinkle with mozzarella and remaining green onion. Bake 10 to 15 minutes until cheese is melted. Let rest 10 minutes before serving.

- Preheat oven to 350 degrees. Boil pasta shells 25 minutes. Drain and let cool. In a mixing bowl add the garlic, parsley, a little over half the container of ricotta and a little over half the bag of mozzarella. Mix well. In a large rectangle baking dish add a layer of sauce. Then begin to fill the shells and line them up. Do not over stuff or shells will fall apart when serving. Make sure the shell can close. Top with sauce so it completely covers the shells then sprinkle the rest of the mozzarella on top. Bake for 30 minutes. Remove from oven and let stand for 10 minutes before serving.
