A vinaigrette dressing made using Umeboshi (Japanese Pickled Plums). Very nice on blanched bean sprouts.

1/4 cup rice vinegar or 1/4 cup white vinegar
1/2 cup vegetable oil
1 tablespoon sugar, to taste
1 teaspoon sesame oil
1 -2 tablespoon umeboshi plum paste or 2 large umeboshi, seeded
salt and pepper

Steps:

  • Place all ingredients in blender and puree.

2 cups Cooked sushi rice
2 pieces Nori (Dried seaweed)
1 Avocado
2 pieces Umeboshi, pickled plum

Steps:

  • Wet your hands. Using your hands, spread a thin layer of rice on the sheet of nori.
  • Place sliced avocado and a small slice of Umeboshi on top of rice.
  • Wrap and voila! Your umeboshi wrap is ready to serve

Ume is often called plum or pickled plums, however it is much closer to apricots. You can find ume trees in US now. Ume is not tasty fresh and must be either pickled or preserved.

  • 1. Prepare Tahini Dip: Blend all ingredients on low to medium low in a blender until smooth.  2. Preheat the oven to 425°F, and spray a large rimmed baking sheet with olive oil cooking spray.  3. Whisk together the umeboshi paste, toasted sesame oil, shoyu, honey, and garlic powder in a small bowl until well combined. 4. Toss the sliced sweet potato, green beans, and carrot together in a large bowl. Pour the umeboshi mixture over, and stir to cover all of the vegetables with the liquid. 5. Spread the vegetables out on the baking pan, making sure they don't get too close together or the edges won't crisp. Bake for 15 minutes, then stir; bake for another 15 minutes, and stir again.
