The ultimate chilli con carne Recipe | Good Food image

There is no wrong way to cook chilli con carne, because there is no single authentic recipe for it that exists in either Mexico or Texas. This means we're free to cook up beef, chilli, beans and spice any which way we like. Even so, let's give it a little more heart and soul by chopping the meat by hand, and cooking it low and slow to produce deeper, richer flavours.

1.5kg beef chuck or brisket, cut into 3cm pieces
pinch or more of cayenne or ancho chilli powder
2 tbsp plain flour, seasoned
4 tbsp vegetable oil
2 onions, chopped
3 garlic cloves, grated
400g canned tomatoes, chopped
2 tbsp tomato paste
1 tbsp chipotle in adobo, finely chopped (with sauce)
1 tbsp ground cumin
1 tbsp dried oregano
1 tbsp ground cinnamon
1 litre beef or vegetable stock
400g canned red kidney beans, rinsed
400g canned borlotti beans, rinsed
1 tbsp unsweetened cocoa powder
coriander sprigs and steamed rice for serving

Steps:

  • 1. Heat the oven to 160C. Toss the beef in flour seasoned with cayenne pepper, salt and pepper. Heat two tablespoons of oil in a heavy frypan and brown half the meat until lightly tanned, then transfer to a heavy casserole. Add one tablespoon of oil to the frypan and repeat with remaining beef.

    2. Add remaining one tablespoon of oil to the frypan and cook the onion for five minutes until softened, adding garlic towards the end. Add tomatoes, tomato paste, chipotle in adobo, cumin, oregano and cinnamon, stirring. Add the stock and heat to a simmer.

    3. Combine with the beef in the casserole dish. Cover and cook in the oven for 2½ hours, stirring once or twice after the first hour.

    4. Add both types of beans and cocoa powder, stir through, and simmer, uncovered, for 30 minutes or more until meat is tender and sauce is thickened. Taste for salt, pepper and chilli, and serve with coriander and steamed rice.

1 Middle Eastern-style flatbread or pitta
4-5 falafels (see recipe below)
4-5 slices avocado
small handful of parsley, coriander and mint leaves
½ lime, juiced
generous drizzle of sriracha
75ml natural yogurt
½ tbsp tahini
½ lemon, juiced
1 small garlic clove, crushed
pinch of ground cumin

Steps:

  • For the tahini sauce, mix together all the ingredients with some seasoning in a small bowl.
  • Warm the flatbread in a dry frying pan – around 30 seconds on each side. Spoon the tahini sauce onto the flatbread and top with the falafel and avocado, then scatter with the herbs, squeeze over the lime juice and add the chilli sauce. Roll up and enjoy.

    1. Me and my dear friend Pete Begg have two very different approaches to the institution that is the perfect bacon sarnie. The only thing we agree on is that bacon ain't bacon unless it’s smoked, but that’s pretty much where the similarities end.
    2. We do both use two 1½cm-thick slices of simple standard white crusty loaf, but I favour a bloomer and Pete tends to go for a tin loaf. Pete’s a 3 rashers of streaky-bacon boy; I’m a back-bacon boy. He cooks it in a frying pan, starting out from cold with a little drizzle of olive oil and gradually bringing the temperature up to medium-high so the fat renders out, placing something flat and heavy on top to ensure super-even crispy bacon. I, on the other hand, put the grill on full whack, rub a tray and 3 rashers of back bacon with olive oil, then blast it until golden and crisp, which encourages the fat end of the bacon to curl up, creating a little pond of delicious bacon juice in the middle.
    3. Pete butters his bread, then lays the bacon on side-by-side, like floorboards. I skip the butter, but push the bacon to the side of my tray and lay the bread in the fat for a few seconds before assembling, letting the bacon rashers sit on the bed of bread like spooning lovers. At this point, Pete goes into another gear and displays a little trick his dad taught him as a boy, sandwiching his creation together and placing it back in the pan of smoky bacon fat to lightly toast on both sides, again with a little weight on top. And it doesn’t finish there – Pete stipulates that if the bacon runs north to south it must be cut east to west into 3 thin sandwiches, so you get 3 bacon soldiers in each, from which he gets 3 perfect bites. Genius. I simply cut mine diagonally from corner to corner and get it in my gob as quickly as possible .
    4. Having been brought up in Essex I have a loyal commitment to HP sauce, but Pete pulls yet another trick out of the bag, treating his plate like an artist’s palette with 60% ketchup, 30% English mustard and 10% green chilli sauce, feathered together with a knife, to ensure 9 erratic, beautiful-tasting mouthfuls. Wow.
    5. These two sandwiches are both delicious, but most importantly, this is how I like mine and Pete likes his. How do you like yours?

    3. Quarter the eggs. Add the fish and rice to a pan and gently heat through. Add the eggs, most of the coriander and the chilli and stir gently. Place in a warm serving dish. Mix the rest of the coriander into the yoghurt and serve with the kedgeree.
