This is an old recipe from my Mom's dad's side, the origins of which we are unsure. All we know is, they are addictive! Unlike traditional Polish and Czech pastries by the same name, these are tiny open-ended jam cookies. They are traditionally eaten at Christmastime. This is my mom's version of the recipe, so I must warn you from experience that if you double it, you will actually have more of a quadruple recipe!

Yield 50-75 cookies

Number Of Ingredients 9

1 lb butter
1 lb cream cheese
4 egg yolks
1 lemon, zest of
1 cup sugar
6 cups flour
apricot filling or poppy seed filling
1 egg white
confectioners' sugar (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cream together butter, cream cheese, sugar, egg yolks and lemon zest.
  • Stir in flour, creating stiff dough.
  • Mold dough into hamburger-size patties and refrigerate for at least 8 hours.
  • Roll patty out 1/8-1/4 inch thick, preferably on chilled marble or glass cutting board.
  • Cut dough into 2 1/2 inch squares.
  • Place squares on cookie sheet (ungreased is OK).
  • In each square, dab about 1/3 teaspoon pastry filling.
  • Fold one corner halfway over pastry so that it points to opposite corner.
  • With pastry brush, dab egg white onto folded corner.
  • Fold opposite corner onto folded corner.
  • Press lightly to fix with egg white.
  • Optional: Brush egg white over top of cookie and dust with confectioners' sugar.
  • Bake cookies for 15-20 minutes or until edges are slightly brown.

These Christmas cookies are a perennial favorite. They may be rolled out and cut into rounds, stars, or crescents. Often they are hung on the lower branches of the Christmas tree as treats for the younger children.

4 cups flour
1 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 cup powdered sugar
2 teaspoons baking powder
2 extra large eggs
1 cup honey
2 tablespoons chopped orange rind
1 egg, beaten with a little water for glaze
20 blanched almonds (without peel)
coarse sugar crystals

Steps:

  • Sift together flour, spices, powdered sugar, and baking powder. Note: powdered sugar sometimes called icing sugar, confectioners' sugar or XXX sugar, all the same thing.
  • Add eggs, honey, and orange peel to make a stiff dough.
  • On a floured work surface, roll out dough about 1/2 inch thick.
  • Cut shapes with cookie cutter, place on nonstick baking sheet, and brush with glaze.
  • Place 1/2 almond in the middle of each, sprinkle with coarse sugar, and bake in preheated 350 degrees oven until done, about 15 minutes.
  • Cool on racks.
  • Store in tightly covered tins.

  • 1. Mix poppy seeds, walnuts, egg and honey. Add in rum till the consistency seems soft, like porridge. Drink remaining rum, you deserve it, since you'll be baking for a while. 2. Using an egg beater at low, whip soft cream cheese and butter till it forms peaks, like a frosting (you may need to heat the butter if the cream cheese is hard). Fold in flour slowly using a wooden spoon or possibly pastry fork. 3. Roll dough into 3 balls. Occasionally add in lowfat milk to dough to keep it from drying out. The dough can be refrigerated for 1-2 hrs, but it is not necessary. 4. Roll out 1 ball at a time and flour lightly. Roll dough out in flour or possibly granulated sugar so it doesn't stick. 5. Mom's method: Cut dough into squares or possibly circles using cookie or possibly biscuit cutter. Add in about a tsp. of filling. Roll squares into "logs", "stars", or possibly "pinwheels". Fold circles over and seal with a fork. This takes dexterity and patience, sooooo I invented. 6. Mike's Shortcut: Take rolled dough and make into strips about a foot long and 2" wide. Place a ribbon of filling in the middle. Fold over dough and healthy pinch to seal at all sides. Cut into 1" squares. 7. Dip into coating and place on a cookie sheet. Bake at 375F for 10-15 min or possibly till lightly browned. There is sufficient sugar and fat to keep the bottoms from sticking to a clean pan. Hide in the bedroom and eat these with lowfat milk till sick.(Especially if you are six years old.) Note: The kolatki are delicate, and fancy shapes require speed and skill. They taste as good using my method. My mother thinks I am impatient. Once you have eaten these cookies, you will understand why.
