3 pounds Italian sausage links, cut into 3/4-inch slices
4 medium green peppers, cut into thin strips
1 medium onion, thinly sliced and quartered
1 tablespoon butter
1 tablespoon olive oil
3 tablespoons chicken broth
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon lemon juice
6 plum tomatoes, coarsely chopped
Hot cooked polenta, optional

Steps:

In a Dutch oven or large skillet, cook the sausage over medium heat until no longer pink; drain. Add the next 9 ingredients. , Cover and cook until vegetables are tender-crisp, 10-12 minutes stirring, occasionally. Add tomatoes and heat through. If desired, serve with polenta.

1 medium onion, sliced
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 each small green, sweet yellow and red peppers, julienned
6 boneless skinless chicken breast halves (4 ounces each)
Hot cooked pasta
Shaved Parmesan cheese, optional

Steps:
