BISTECCA ALLA FIORENTINA (TUSCAN PORTERHOUSE) RECIPE ...
This flagship, Tuscan steak is made from the region's Chianina breed of cattle which are prized for their tenderness and flavor. In typical Italian style, simplicity rules the day; little more than olive oil, rosemary, and salt are needed to highlight the rich flavor of the grilled meat. With Italian food, freshness and quality are top priority, so I use nothing less than choice porterhouse, and much prefer prime!

Steps:
- Press chopped rosemary onto both sides of porterhouse steak; set onto a plate and allow to marinate at room temperature for 1 hour.
- Start an outdoor grill using hardwood charcoal, such as hickory. When coals are white and glowing, arrange for high heat.
- Gently brush or rub olive oil onto steak, then season to taste with sea salt and pepper.
- Place steak onto grill, and cook until a dark, golden brown (not burnt) crust forms, 5 to 10 minutes depending on thickness of meat. Turn over, and continue cooking until golden on the other side, 5 to 10 minutes more. When finished, place steak onto a platter, and allow to rest for 10 minutes.
- To serve, remove the two pieces of meat from the bone, and replace the bone onto the serving platter. Trim any unwanted fat from the round (tenderloin) steak, slice into 6 equal pieces at an angle to the grain, and fan out on one side of the bone. Slice the rectangular (loin) steak into 1/4-inch slices at an angle to the grain. Fan out on the other side of the bone. Finish by garnishing the platter with lemon wedges and a sprinkle of additional sea salt.

This is one of the simplest and best steak preparations you will EVER make. I've been trying for years to find the perfect grilling recipe to bring out the natural flavors of a great steak without over powering them. This recipe rivals the best steakhouses out there. You must buy prime steaks (I got mine from Costco). I adopted this from the Barbecue Bible, but took some liberties. My guests absolutely raved!

- Preheat the grill to high. Keep covered and try to get up to 500 F. Using wood or charcoal is ideal (but I usually don't), While grill is pre-heating, wash and the steaks dry, then liberally season them with coarse salt and ground pepper on both sides. Spray the side that is going down first on the grill with an olive oil spray. Make sure the grills are glowing and put the steaks down. Cook the steaks about 6 minutes per side with the grill closed for medium rare. (My grill flares if I keep it open, so I close it. Either way is fine.) Salt and pepper liberally, and spray with additional olive oil, when you turn it. Remove to a deep serving platter. Salt and pepper one last time. Drizzle the olive oil over the steakand let stand for 3-5 minutes before serving. Cut servings off the bone for each guest. Mix the oil and juices that collect at the bottom of the serving dish and and spoon it over the steak you serve. Make sure you keep the bone for yourself. open a nice bottle of Barolo, and get ready for one of the world's best steaks!
