This is a very easy but elegant recipe that looks like you've spent hours in the kitchen when you've barely lifted a finger!

Number Of Ingredients 7

2 large bone-in chicken breast halves with skin
¼ cup extra-virgin olive oil
½ teaspoon garlic, minced
½ teaspoon coarse sea salt
½ teaspoon cracked black pepper
¼ teaspoon dried rosemary
¼ teaspoon dried basil

Steps:

  • Rub chicken breasts with olive oil and garlic; sprinkle with salt, black pepper, rosemary, and basil. Arrange chicken in a large baking dish and refrigerate at least 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven until chicken meat is no longer pink at the bone and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted in the thickest part of the breast meat should read 165 degrees F (75 degrees C).

extra-virgin olive oil

boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

1 tsp.

dried oregano

3 tbsp.

butter

3

cloves garlic, minced

1 1/2 c.

cherry tomatoes, halved

3 c.

baby spinach

1/2 c.

heavy cream

1/4 c.

freshly grated Parmesan

Lemon wedges, for serving

Steps:

  • In a skillet over medium heat, heat oil. Add chicken and season with salt, pepper, and oregano. Cook until golden and no longer pink, 8 minutes per side. Remove from skillet and set aside.  In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.  Stir in heavy cream and parmesan and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return chicken to skillet and cook until heated through, 5 to 7 minutes.  Serve with lemon wedges.

  • In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1 cup pasta water. Meanwhile, in a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until golden and no longer pink inside, about 8 minutes per side. Let rest 10 minutes, then thinly slice. Meanwhile, in same skillet, cook bacon over medium heat until crispy, 8 minutes. Drain on a paper towel–lined plate, then chop. Pour off half of fat from skillet. Add garlic, tomatoes, and spinach to skillet and cook over medium heat until fragrant and slightly wilted, 2 minutes. Season with salt and pepper, then add heavy cream, Parmesan, and 1/2 cup of reserved pasta water. Simmer 5 minutes. Add cooked pasta and toss until fully coated, then add chicken and bacon and toss until combined. (For a looser sauce, stir in more reserved pasta water.) Garnish with basil before serving.
