1 turkey (14 to 16 pounds)
1/4 cup butter, softened
2 teaspoons dried thyme
1 teaspoon salt
1 teaspoon dried rosemary, crushed
1 teaspoon rubbed sage
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
1-1/2 pounds thick-sliced bacon strips (about 20-24 strips)

Steps:

  • Preheat oven to 475°. Place turkey on a rack in a shallow roasting pan, breast side up. In a small bowl, combine butter, thyme, salt, rosemary, sage, poultry seasoning and pepper; spread over outside of turkey breast and legs. Add 2 cups water to pan., Wrap turkey legs in a single layer of bacon strips, trimming to fit (about 6 slices total). Tie drumsticks together. On parchment or waxed paper, arrange 8 bacon strips side by side. Weave 8 slices bacon perpendicular to first 8 strips, making a lattice. Adjust lattice so it is tightly woven. Transfer lattice to turkey breast by flipping parchment over the turkey; carefully peel off parchment. Adjust lattice to cover turkey breast and trim edges of bacon to fit. Secure with toothpicks, if needed. , Roast, uncovered, until bacon is lightly browned, 25-30 minutes. Reduce oven setting to 350°. Bake until a thermometer inserted in thickest part of thigh reads 170°-175°, about 90 minutes longer. Cover loosely with foil if bacon browns too quickly., Remove from oven. Cover and let stand for 15 minutes before carving.

1 boneless turkey breast (2-3lbs)
1 lb bacon
salt and pepper

Steps:

  • Preheat your oven to 300 degrees.
  • Start with the bacon weave.
  • To make the weave, lay out eight strips of bacon vertically on a piece of foil or plastic wrap.
  • Then, fold over every other vertical piece of bacon in the middle. Next, place a strip horizontally across the vertical bacon.
  • Then, unfold the folded strips and fold back the alternate row of bacon that you previously left flat. Place the next piece of bacon across the vertical strips directly adjacent to the first horizontal piece. Repeat this process two more times.
  • Once you finish the first half, repeat with the other half.
  • Season the top of the bacon with a little salt and pepper.
  • Now it is time to prepare the turkey breast. You can do this with a bone-in turkey breast, but it will take a lot more bacon. I prefer the ease of a boneless turkey breast. If your turkey breast was packaged with a net around it, make sure to cut the net off and dispose of it. There really won't be a need for the net as the sweet bacon weave will take its place. Once you have the turkey breast unwrapped and de-netted, season with a little salt and pepper. Then, wrap in the bacon. The foil/plastic wrap that you assembled your weave on will help you encase the turkey with the bacon.
  • Once you have the turkey wrapped, place it on a rack on foil lined sheet pan.
  • Insert a probe thermometer and then place into the oven. Cook until the internal temperature of the turkey breast is 165 degrees Fahrenheit. This took about 1 hour and 45 minutes for my 2.5 lb turkey breast. This time will vary based on the size of your breast. As always, make sure to cook based on temperature and not on time.
  • Once the breast has come to temperature, remove from the oven and let rest for 10 minutes before carving.
  • Serve and enjoy!

On left breast, cut along right side of tenderloin to separate from breast without cutting tenderloin off; fold tenderloin back. Repeat on right breast, cutting along left side of tenderloin and folding back. Cover surface of turkey with 3 large sheets plastic wrap. With flat side of meat mallet or heavy rolling pin, pound turkey until about 1 inch thick all over. Discard plastic wrap. Sprinkle surface of turkey with 3/4 teaspoon salt. In food processor, pulse green onions, parsley, oil and garlic until finely chopped, stopping to stir occasionally. Spread herb mixture in even layer on breast. Starting with short side, roll breast tightly. Place seam side down. Drape bacon over turkey roll, overlapping slices slightly. Tuck ends of bacon under turkey roll. Using 16-inches pieces of kitchen string, tie turkey tightly at 11/2-inches intervals. (Turkey may be wrapped tightly in plastic and refrigerated up to overnight.) Transfer to rack fitted into roasting pan lined with foil. Add 4 cups water to bottom of pan. Roast 45 minutes. Meanwhile, whisk together sugar, vinegar and syrup. Brush over turkey after it has roasted 45 minutes. Roast another 45 minutes. or until turkey is cooked (internal temperature reaches 160 degrees F), basting with sugar mixture every 15 minutes. Loosely cover with foil; let rest 20 minutes. Cut and discard strings before slicing and serving.
