My mom substituted turkey sausage, egg beaters and low fat cheddar to reduce the fat. We have this dish every Christmas morning with croissants.

1 pound ground turkey sausage
4 large eggs eggs, lightly beaten
4 medium (4-1/8" long)s green onions, finely chopped
1 (16 ounce) package frozen hash brown potatoes
½ cup milk
1?½ cups shredded Cheddar cheese

Steps:

  • Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage. Pour mixture into a 9x13 inch baking pan.
  • Bake in preheated oven for 60 minutes.

This is really quick and easy to make. I usually make a double batch and freeze individual patties to keep in my freezer for breakfast. I have another turkey sausage recipe, but I've since found this one and like it much better. These can be cooked in a skillet or on a George Foreman grill.

1 lb ground turkey
1/8 cup warm water
1 teaspoon sea salt
1 pinch nutmeg
1 pinch allspice
1 teaspoon garlic powder
1 teaspoon sage
1/4 teaspoon thyme
1 pinch mustard powder
1 pinch lemon peel

Steps:

  • Place meat in a medium sized bowl.
  • Add spices to water and blend well.
  • Pour spice blend over meat and mix well.
  • Make into patties of desired shape.
  • Cook until center is no longer pink.
