TOASTED SALAMI AND TURKEY SANDWICHES RECIPE -

I made these sandwiches when I had extra salami from making a pizza earlier in the week. My husband and I both love them.

Prep Time 10 minutes

Cook Time 5 minutes

Number Of Ingredients 8

2 pub-style sandwich buns
1 -2 tablespoon butter or 1 -2 tablespoon margarine
1 slice mozzarella cheese
1 slice cheddar cheese
4 slices salami or 4 slices pepperoni
5 slices deli turkey or 5 slices deli chicken
1 tablespoon mayonnaise (optional)
1 tablespoon mustard (optional)

Steps:

  • Butter both halves of the buns.
  • Broil in the oven until just turning brown.
  • Remove from oven.
  • Add cheese to the top half of the bun.
  • Add turkey and salami to bottom half of bun.
  • Return to oven and broil until cheese just melted.
  • Remove from oven and add mayonnaise and mustard if desired.

If you have any leftovers from the day before, there are lots of dishes in which you can use them. Take an omelet for example, it’s a good dish which can be made with a wide variety of ingredients. We’ve made this one with leftover turkey, Cheddar, salami, some veggies, and a nice touch of chili to spice things up a little. It’s definitely worth trying!

Number Of Ingredients 13

3 eggs
2 tablespoons of heavy cream
salt
pepper
1 tablespoon vegetable oil
¼ red onion, thinly sliced
¼ red bell pepper, thinly sliced
3 cherry tomatoes, sliced in halves
½ green chili, sliced
3.5 ounces of leftover turkey breast, thin shreds
¼ cup cheddar, shredded
6 salamis

Steps:

  • Crack the eggs in a large bowl and whisk them. Add the heavy cream, season with salt and pepper, and whisk so the cream can be absorbed.
  • Heat the oil in a skillet over medium heat. Add the red onion and cook it for 1-2 minutes. Add the bell pepper, tomatoes, chili, and leftover turkey. Evenly spread all of the ingredients in the skillet. Add the whisked egg and season with salt and pepper.
  • When the omelet starts to cook, top it with shredded Cheddar and spread the salami slices. You can garnish it with some spring onion and wait for the omelet to finish cooking.

HOMEMADE SUMMER SAUSAGE AKA SALAMI RECIPE -
This recipe is as old as the hills. I've made it for the last 50 years and it was old when I got it. I thought it would be a good addition, so that young cooks can see how easy it is to make a basic sausage. You can play with it, add more spice or whatever. I do suggest trying it as written first. Just as good as what you can buy, but you know what is in there. I make a double recipe and then freeze it. It is really easy and quick to whip this up and costs a lot less than store bought. Prep time does not include sitting in the fridge for 24 hours.
