These Pesto Turkey Sliders let you keep all the fun of a bite-size burger while cutting the fat and adding some sophistication.

2 tbsp pesto (plus extra if you want to use it as a topping)
1 egg
1/4 cup quick-cooking oatmeal
16 oz ground turkey (93% lean)
mozzarella cheese slices
slider buns

Steps:

  • Mix first three ingredients in a large bowl.
  • Add in ground turkey and mix with your hands.
  • Form slider-sized patties.
  • Cook on a nonstick griddle or pan for a total of about 14 minutes, turning approximately every 4 minutes.
  • Add cheese on top and cook for one more minute.

6 slider buns, split horizontally
6 slices turkey deli meat
6 slices provolone cheese
3 tablespoons purchased basil pesto
3 tablespoons mayonnaise
1 tablespoon butter, melted

Steps:

  • Lay a folded slice of turkey on the bottom half of each bun. Layer each with a slice of provolone. (Tear turkey and cheese as necessary to fit.) In a small bowl, stir together the pesto and mayonnaise. Spread a thin layer of the pesto mixture on the inside of the top half of each bun. Replace the top bun over the cheese to assemble the sandwiches. Arrange sandwiches on a foil-lined baking sheet. Brush the tops of the buns lightly with melted butter. Bake in a 400° oven 8 to 10 minutes or until the cheese is melted and sandwiches are warmed through.
