These four-ingredient meatballs are genius. By adding reduced-fat pesto sauce to the ground turkey meat, you streamline the meatball prep. With one easy ingredient, you get basil, garlic, cheese, and oil. And in addition to great flavor, the pesto makes the meatballs wonderfully juicy, too. All that's left to add is breadcrumbs, egg whites, and a little salt. The meatballs roll up easily, and brown in the oven in just 20 minutes. If you want to serve them with sauce, put a pot of marinara on the stovetop to simmer while the meatballs are cooking. After they come out of the oven, lower them into the sauce and let the flavors simmer together for a few minutes before serving. You can serve these with spaghetti, or even spaghetti squash.

Steps:

  • Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
  • In a large bowl, gently combine all ingredients—do not overmix or meatballs will be tough. Roll into 24 meatballs (1 1/4-in each); place on prepared pan.
  • Bake until lightly browned and cooked through, 20 minutes.

Serve these meatballs atop pasta, spaghetti squash noodles or as a hero sandwich inside of a hoagie bun. You can also serve them with a plate of steamed vegetables.

0.5 tsp Ground cinnamon divided
1 Tbsp Olive oil
28 oz Canned diced tomatoes
3 Tbsp Canned tomato paste

Steps:

  • 1 Preheat oven to 400°F. Spray large rimmed baking sheet with nonstick spray.
  • 2 To prepare meatballs, stir together turkey, 1/2 cup onion, the bread crumbs, egg, pecorino Romano, half of garlic, 3 tablespoons parsley, 1 tablespoon mint, 1 teaspoon oregano, 1/2 teaspoon salt, the pepper, and 1/4 teaspoon cinnamon in large bowl just until mixed. With damp hands, form into 18 (1-inch) meatballs. Place meatballs on prepared baking sheet and bake, turning once, 20 minutes.
  • 3 Meanwhile, heat oil in Dutch oven over medium-high heat. Add remaining onion, remaining garlic, and remaining 1 teaspoon oregano. Cook, stirring often, until onion is softened, about 3 minutes. Stir in tomatoes with their juice, tomato paste, remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon cinnamon; bring to boil. Reduce heat to low and cook, stirring occasionally, until sauce is slightly thickened, about 15 minutes. Add meatballs and simmer about 15 minutes longer. Remove from heat and sprinkle with additional parsley and mint.
  • Serving size: 3 meatballs and about 1/2 cup sauce
